There is a lot of dispute on this one. As some believe they originated from a custard pie from the English. The French versus the Italians and the Florentine era, when the french and the italian cuisine and culture started to mix is another theory. Another one is that it came from the europeans, romans and greeks and when they started to use curds in their baking. All in all, I don't htink one particular country invented cheescake, but what versions and what makes them unique and have passed the test of time is what is really important.
The french use a variety of differnt cheeses, but what sets them apart is that their cheesecakes are known for fluffiness.
The Italians-use ricotta and their cakes a re a bit drier in consistency (I prefer Italian Cheescake as it is much lighter.
The Polich-incorporate fruit into theirs.
And well the amercicans took the french recipe and put their own spins. New York Cheescake which is now a world wide favorite.

Cheesecake is believed to have originated in ancient Greece. History has the first recorded mention of cheesecake, as being served to the athletes during the first Olympic Games held in 776 B.C.
