1 package cream cheese (softened)
2 cups Sharp Cheddar cheese (grated)
1 large can of canned chicken (drained)
1 Tbl. spoon Wosteirshire sauce
1 teaspoon minced onions (to taste)
garlic salt (to taste)
ground red pepper (to taste) or tabasco
I mix everthing in a bowl. You can use the kind of cheese you like best. Sometimes I use swiss cheese. I roll into little bite-size balls and then roll in crushed walnuts or pecans (to taste). Then I put then on a tray in the fridge until they set.
You can make them bigger if you want. My mom makes softball size, but my husband likes the ones he can pop in his mouth.

I make great smoked turkey balls by putting 2 parts smoked turkey and 1 part cream cheese with a TINY bit of pressed garlic, a few drops of worchestireshire sauce in a food processor, process, shape into a ball, roll in a mix of toasted pecans & chopped parsley.
If it was plain chicken it might be a bit bland...you could add seasonings or a little smoke flavoring. I've also make regular veges and salmon 'smokey' with smoking chips in the weber bbq.

Grilled Chicken Balls
This Recipe Serves 4
Ingredients:
For chicken balls:
11 oz. skinless chicken , ground
2 eggs
1/2 tsp. salt
2 tsp. plain all-purpose flour
2 tsp. cornflour ( cornstarch )
6 tbsp. dried breadcrumbs
1 in. piece ginger, grated
For yakitori sauce:
4 tbsp. sake
5 tbsp. soysauce
1 tbsp. mirin
1 tbsp.caster sugar ( superfine )
1/2 tsp. cornflour ( cornstarch ) dissolved in 1 tsp. water
8 bamboo skewers
Direction:
1. Mix well all the ingredients for the chicken balls except grated ginger. Or if using food processor, put all ingredients for chicken balls and blend well.
2. With wet hands, scoop about a tablespoonful of mixture into your palm and shape it into a small ball about half the size of a golf ball. This recipe makes about 30-32 balls. Set aside.
3. In a small bowl, squeeze the juice from the grated ginger. Discard the pulp.
4. Boil water in a small pan and add the ginger juice. Add the chicken balls and boil about 7 minutes or until color of meat changes or balls starts to float to the surface. Scoop out balls and drain on paper towel.
5. Meanwhile, using another small pan, mix all the ingredients for the yakitori sauce, except for the cornflour liquid. Bring sauce to a boil then, reduce heat and simmer for about 10 minutes or until sauce has slightly reduced.Add the cornflour liquid and stir until sauce thickens. Transfer into a small bowl.
6. Thread 3-4 balls onto a skewer. Cook under medium grill or barbecue. Turn frequently for a few minutesor until balls start to brown. Brush with yakitori sauce and return to heat. Repeat this process twice.

Like a little snack ball?
Just make it like a chicken salad. Onions and celery, dice it. Add in a little mayo unitl you get it to the right consistency. Then add in a little hot sauce, worecheshire sauce, salt and pepper and a little mustard Add in some minced chicken (cooked). also whatever herbs you like. Personally, i like basil, thyme, oregano. A little garlic powder and onion powder. Then add in your breadcrumbs and 1 egg. Add it until it becomes mushy and it will hold its shape if you squeeze it.
Then just deep fry in 350 degree oil until it is Golden, Brown and Delicous.
