Italian Meatloaf
1 lb. Owens Italian Roll Sausage
1-7 oz. can mushrooms (stems and pieces) drained
1 egg
1/2 cup bread crumbs, plain
1/3 cup green bell pepper, diced
1/3 cup tomato paste
3 rounded tbsp. chopped fresh parsley
3 rounded tbsp. scallions, sliced green part
1/2 tsp. garlic powder
1 pkg. favorite cooked pasta
To Taste: Black Pepper
Preheat oven to 375F. In a large bowl, add vegetables, parsley, tomato paste, egg and bread crumbs to sausage. Season with garlic powder and black pepper. Mix until well blended. Place mixture into a loaf pan (dimensions of 4" x5" wide, 2-2 1/2" deep and 8"-9" long). Note: Spray pan with vegetable spray for easy release. Place on center oven rack and cook for 25 to 30 minutes, depending on oven. Let cool slightly from oven and remove from loaf pan. Slice and serve on platter with favorite pasta, tomato sauce and grated cheese. Serves 4. Refrigerate leftovers.

Classic Meat Loaf Recipe
1 cup of finely chopped onion
1 celery rib, chopped fine
1 Tbsp minced garlic
1 carrot, chopped fine
1/2 cup of finely chopped scallion (can substitute onion)
2 Tbsp unsalted butter
2 tsp salt (use 1 1/2 teas if using Italian sausage)
1 1/2 tsp freshly ground pepper
2 tsp Worscestershire sauce
2/3 cup ketchup
1 1/2 pounds of ground chuck
3/4 pound of spicy ground pork sausage (or use Italian sausage - 1 sweet, 1 hot)
(NOTE: many versions of meatloaf call for ground veal as well. I would experiment with a third each of beef, pork, and veal.)
1 cup fresh bread crumbs
2 large eggs, beaten slightly
1/3 cup minced fresh parsley leaves
Preheat oven to 350 degrees F.
In a large heavy skillet cook the onion, garlic, celery, carrot, and scallion in butter, over moderate heat, stirring, for about 5 minutes. Cover and stir occassionally until the carrots are tender, about 5 more minutes. Stir in salt and pepper, Worcestershire sauce, and 1/3 a cup of ketchup. Cook for 1 more minute.
In a large bowl, combine the meats, eggs, bread crumbs, vegetables, and parsley. Form into a loaf and put into a retangular baking pan with 2 inch high sides. Cover loaf with remaining ketchup.
Bake meat loaf in oven for 1 hour.
Serves 4 to 6.

This easy Italian meatloaf recipe uses ground round and Italian link sausages and is quick to mix together and cook in the oven or crockpot while you concentrate of doing something else. You can substitute leftover mashed potatoes for the instant mashed potatoes in the recipe.
INGREDIENTS:
2 lbs. ground round, browned & drained
5 links Italian sausage, cooked & chopped - spicy or mild
1/2 C. instant mashed potatoes, garlic or sour cream & onion, prepared
1 can cream of mushroom soup
1 C. bell pepper, chopped - different colors
1/4 tsp. Thyme
1/4 tsp. Coriander
1/4 tsp. Ground Cumin
1/4 tsp. Dill
1 1/2 T. Worcestershire sauce
1/2 Onion, chopped
1/4 tsp. Ground Cloves
Salt & pepper to taste
PREPARATION:
Mix well and spread mixture in stoneware. Cover top with remainder of packet nstant potatoes. Cover & cook on high for 2 hours; then, turn to low another 3 - 4 hrs.

Hello... This recipe is an absolute must.. You will want to make it over and over again. There's how: Ingredients: 3 large potatoes , peeled (baking potatoes are fine) olive oil 4 pork sausages , look for ones with herb and garlic flavours 1 onion , chopped 1 garlic clove , crushed pinch chilli flakes (optional) 2 carrots , cut into small dice 2 sticks celery , cut into small dice rosemary needles , stripped from 4 small sprigs and chopped 1 x 400g tin chopped tomatoes 300ml white wine or chicken stock 3 tbsp Puy or green lentils Method: 1. Heat the oven to 200C/fan 180C/gas 6. Cut the potatoes into 2cm chunks, toss in olive oil then spread out on a non-stick baking tray. roast for 40 minutes until crisp and golden, turning a couple of times during cooking. 2. Meanwhile, cook the whole sausages in a little more olive oil in a large pan until browned all over. Take the sausages out of the pan then add the onions and garlic and cook until softened. 3. Add the chilli (if using) carrot and celery, then cook for 5 minutes. add 2/3 of the rosemary, all of the tomatoes, wine or stock and lentils. Slice each sausage diagonally into 4 thick chunks then add back to the pan. Simmer with a lid almost covering for about 30 minutes, or until the lentils are tender. 4. When the potatoes are cooked, toss with some sea salt and the rest of the rosemary, then serve with the stew. This will definitely leave you wanting for more. I have a couple more recipes about italian sausage as i like those a lot. Let me know if you want them. This recipe will take you about 1hour to make... Hmmm Yummy :) xx
