I would get mozerella cheese (some grocery stores also have smoked mozerella which is also a good compliment to salami and olives)
You may also want to add some cherry tomatoes, crackers or wheat thins, amd maybe some basil as well

The perfect compliment to that kind of tray is to add the small, sweet onions that you can get in any grocery store...also, the small, pickled corn spears would be great. Fresh veggies cut up would also be good with it: carrots, celery, even bell pepper. To keep it on the "fancy" side, you can slice them with specialty knives and make them look nicer than just regularly sliced veggies.

Put some baby gherkins & grapes.I use yellow and white cheese for my trays.They also look real nice with a few cherry tomatoes around on it.Are you putting toothpicks out or pretzel sticks.I use the pretzel sticks for safety and less clean up.

Maybe some nice peppers. Cherry peppers are good as well as pepperoncini. Goat cheese would go well or gouda. Gotta have some crackers too.

Add cut up apples and banana slices, but put some lemon juice on them first or they will turn dark. Also add grapes. Probably both mild and sharp cheeses; ask the deli person at your market.

Use provolone, fontina or Swiss with the salami. I think some fruits would go well with this combination - grapes, melon, strawberries.
