in the oven it'll take 50 - 70 minutes. i'd say the same for the rotisserie... around 45-50 minutes, check the chicken for doness. Stick a thermometer into the chicken or stick a bamboo stick deep into the thigh.. If the liquid coming out is still pink then it's not done yet. There's nothing worse than an over cooked chicken.. And nothing better than a perfectly cooked chicken.

ROTISSERIE CHICKEN

Preparation time: 10 minutes
Grilling time: 90 minutes
Serves 3-4


1 whole chicken (about 1.2 kg / 2 1/2 lb), skin removed
OR
1 chicken breast roast* with or without skin (about 500g / 1 lb)
OR
1 chicken breast "au porc" ** with or without skin (about 500g / 1 lb)
your choice of sauce or glaze
barbecue rotisserie

Set the barbecue on medium heat.

Lift up the grill and put a deep foil pan underneath. Fill the pan with about 2 inches of water. Check the pan frequently during cooking and add more water if needed.

Slide the chicken onto the rotisserie, making sure it is well secured. Grill the chicken, with the lid closed, according to the rotisserie manufacturer's instructions. Make sure the chicken does not touch the water.

Grill the whole chicken on the rotisserie for about 90 minutes or until a meat thermometer inserted in the breast reads 180F (83C).

Grill the chicken breast roast for about 75 minutes or until a thermometer inserted into one of the breasts reads 170F (77C).

Grill the chicken breast au porc for about 60 minutes or until a thermometer inserted in one of the breasts reads 170F (77C).

Baste the chicken generously and frequently with a sauce or glaze during the last half hour of cooking.

* To make a chicken breast roast, you'll need 2 large (200g each) boneless chicken breasts with or without skin. Place one breast on top of the other (skin on the outside) and tie them together securely with cotton string. A chicken breast roast will serve 3-4.

** To make the chicken breast au porc, you'll need 2 large (200g each) boneless chicken breasts (with or without skin) and 125 g of fresh pork tenderloin. Place the pork on one chicken breast and put the remaining breast on top (skin on the outside). Tie securely with cotton string. One chicken breast au porc serves 3.

Tip:
For extra flavour, marinate the chicken before grilling.
