You can either make your number ex-directory in which case it'll never show up on anyone else's phone or you can dial 141 before you dial the number you want to call.

it is different for every area, some areas don't have one. Easiest thing is calling someone with caller ID and ask. If it goes thru a PBX (as in dialing 9) the number will probably change everytime u call since what happens when u dial 9 is the PBX picks the next line available.

141 or call BT and set up to have number withheld automatically, then you'd dial 1470 before number to release it

you dial 141 to withhold number, if you set up the auto withhold on your line, you dial 1470 to let your number be shown
