This should work for you.
2-1/2 lb. beef tenderloin
1 Tbsp. olive oil
1/2 tsp. pepper
1/2 tsp. dried marjoram leaves
1/4 tsp. salt
PREPARATION:
Preheat oven to 425 degrees. The tenderloin will have one end that is smaller and thinner than the rest. Tuck 6" of this end under the rest of the loin. Tie the tenderloin at 2" intervals with kitchen string to keep its shape.
Place on a rack in roasting pan. In small bowl, combine oil, pepper, marjoram, and salt and blend well. Rub this mixture into the beef. Place meat thermometer in thickest section of beef.
Roast at 425 degrees for 40-50 minutes until thermometer reads 140 degrees F minimum. Remove from oven and cover beef tightly with foil. Let stand, covered with foil, for 15 minutes. The temperature will rise about 5 degrees during this time and the juices will redistribute. Remove string and meat thermometer; then carve beef. Serves 6

Hamburger helper is good and easy tuna helper also. You can make a chicken casserole not only is it good but healthy too. The easy way is to get to boxes of macaroni and cheese, a can of peas and a can of corn. Get some boneless chicken breast, and saute it over a hot skillet with some canola oil or olive oil which ever you prefer cut the chicken into slices, drain the can veggies after they are cooked mix all those ingredients before addin the cheese than ad the cheese. After That get a baking pan pour the mixture in the baking pan spreading it evenly. Once thats done get some shredded cheese put on top and bake until the the cheese is melted. Let cool and enjoy. This goes well with dinner rolls and sweet tea.

4xSeven-ounce filet mignons
Five peppercorn mix - (2 black, 2 white, 2 green, 2 pink, 1szechwan)

Method :
* Coat the beef with the peppercorns and marinate in oil, garlic and rosemary for 4 hours or overnight, refrigerated.
* Season beef with salt and sear in a heavy pan. Turn beef over and place in 375 degree oven for 8 to 12 minutes depending on thickness of filet. Cook until medium-rare.
* Place beef on top of a Celeriac Potato Cake so that it will absorb the juices of the beef. Make 3 mounds of the Fried Garlic And Baby Spinach Saute around the beef and drizzle with Basil Oil and demi-glace.
* This recipe yields 4 servings.

Ingredients :
1xlime juiced
1tspminced garlic
1tsporegano
1tspground cumin
salt and pepper to taste
1x7 ounce can chipotle in adobo
2lbsirloin steak
Method :
* In a small bowl combine the lime juice, garlic, oregano, cumin, salt and pepper. Finely chop the adobo peppers and add to the mixture. Taste for heat and add some of the juice from the can, if desired.
* Puncture the steak with a fork several times. Place steak in a dish and pour the marinade over it to coat. Marinate for at least 2 hours or overnight.
* Preheat the grill to high. Grill the steak to desired doneness.
* Cook's note: Marinating times vary for different foods. Usually the longest you want to marinate anything is overnight. After that, marinating tends to waterlog food, making it soft and mushy.
