crack it gently, then peel over running water. works well for me.

I have always found that the fresher the eggs the harder it is to peel them. So I buy the eggs a few days before I need them, let them sit in the fridge a couple days then hard boil them. I also like to peel them under cool running water.

first of all a good hint for some is the process of cooking the egg. place eggs in bottom of pan and cover with water. bring to boil and immediately remove pan from heat and let set 10 minutes. this prevents discoloration of the yolk. Then drain water and cover with cold water and 2 teaspoons salt and ice if possible. Let stand 10-15 min or until nice and cool. Salt will losen the shell.

I use the following method to make boiled eggs, and it seems to help prevent the whites from sticking to shells as well as making the yellows stay nice & bright yellow:
place your eggs in the pan, cover with water by 1" over the eggs.
bring the water to a boil, put a tight fitting lid on pan and remove from heat entirely. Let sit for 15 minutes in pan.
drain water from pan, and run cold tap water over the eggs until cooled. crack eggshell all over egg & return to cool water in pan for a moment before peeling.

You will get some eggs that will not peel easily. They are just stubborn eggs. I peel mine when they are warm, not hot, and the ones that cooperate, slide out to the shell. then I let them soak in cold water to finish cooling.

If you add two tablespoons of salt to the water when you boil them, it loosens the membrane from the shell. Then peel them when they are warm to the touch. They'll slide right out!

dont slide a spoon in - that always takes some white off for me. i generally crack it all around and peel it all off with the thin skin on the egg

You put the egg between both of your palms and roll it (like your trying to start a fire with a stick) while squeezing gently and it will crack. then you just peel it! Its easy!!
