I have a set they seem to be non stick however they don't say nonstick anywhere on them. And on is peeling so I'm going to toss them soon. I'm wondering if ULTREX gourmet quality stainless steel but with a almost nonstick coating...is this the same as nonstick?

There's still a whole lot of controversy as to whether Teflon is unhealthy for humans. All non-stick IS Teflon. There are new products in the works but it could be years before we see them at the retail level.

You don't need to spend a great deal of money. I was building a set of the high-end Analon and then tried Cook's Essentials from QVC. I immediately quit spending on the Analon and completed my set with all Cook's Essentials. You can get it in stainless, hard anodized or enamel. All of it is metal utensil safe but I still prefer to use nylon or silicone just to keep it perfect. I've had many of my pieces for several years and they still look like new, even with regular use. Check them out at qvc.com.

I had a lot of Ultrex nonstick appliances and I found the coating scratched off a lot faster than the name brands. I switched to Cuisinart and haven't had a problem.
