I made chocolate covered strawberries using a recipe that calls for 1/2 cup of chips, and 3 tablespoons of heavy cream. The berries looked great, but the chocolate never fully hardened. Do i need to refridgerate them or leave them at room temperature to get them to harden?

Look for a recipe that has shortening in the chocolate dip. That will set up at room temperature. Choc-covered strawberries that were hardened in the fridge don't taste as good, in my opinion. The berries sweat.

Plus, chocolate with a touch of shortening in it won't dry out as quickly.

I got caught by that kind of recipe too...it never works. In grocery stores, near the chocolate chips, is a dipping chocolate for fruit you can purchase. It is high quality chocolate, melts great in the microwave, and hardens up beautifully. I'd tell you the brand name, but I already ate the leftover chocolate.

Put them in the fridge for about an hour and the chocolate should set.

Try it without the heavy cream and see what happens. if you refridgerate you could run in to a stawberry sweating problem. that is not good.

Always keep them in the fridge until serving time, but cover them as not to pick up any unwanted odors. Happy Holidays.

stick them in the freezer for about a half hour to an hour so they harder but dont become frozen this is what i do when i make chocolate covered pretzels its the same with strawbarrries

i don't know much about cooking. but refridgerating them makes a lot of sense to me.

if it's anything like jello that might work.

You definitely need to refrigerate them, they won't harden otherwise.
