I am at a loss of what to fix.

well tomorrow night is the night before christmas eve and that means you will more than likely be eating a lot of food for the next two days and you will probably be very busy. I would suggest going with something light and quick but still tasty

Get one of those pre maid pizza crusts at your local grocery store and sprinkle a little olive oil on it -- then slice some mozerella cheese and slice about 10 cherry tomatoes in half -- add some oregano and some red pepper if you like and then place in the oven per the directions on the pizza dough -- usually about 10 minutes -- while that is cooking, toss some spinach in balsamic vinegrette and place it on the pizza when it has about 2 minutes left to cook and then serve it

Here's one of my very favorite soup recipes and I share it every chance I get. It's more like a stew and becomes a pretty hearty meal if served over rice. I really hope you give it a try. It takes about 45 minutes to an hour including prep time (closer to an hour if you're adding a lot of veggies that require prep work).

Red Lentil and Coconut Soup


2 TBS coconut oil (do not use refined as it is flavorless)
2 cloves garlic, minced or pressed
1 medium onion, chopped
½ tsp sea salt
½ tsp mild curry powder
1 tsp garam masala
¼ tsp chili powder (spice mix, not ground chilies)
1 tsp ground cumin
1/8 tsp ground cayenne
4 medium tomatoes, chopped (or 28 oz can chopped tomatoes)
1 cup red lentils, sorted
2 tsp lime juice
2 ½ cups vegetable stock (or water with veggie bullion cube)
1 can coconut milk (not cream of coconut)
cilantro for garnish (optional)


1. Heat the oil in a stockpot and sauté the onions and garlic along with
salt for a few minutes, stirring to prevent browning. Add the spices and
cook for 30 more seconds.

2. Stir in the tomatoes, red lentils, lime juice, stock (or water and
bullion) and coconut milk. Bring to a boil.

3. Reduce heat and simmer for about 25-30 minutes or until lentils are
tender and cooked through.

4. Season to taste and garnish with cilantro if desired

NOTE: This is just a base recipe. I’ve found this to be delicious with pretty much any vegetable. It also comes out pretty thick and served over rice makes a great meal.

Other vegetable suggestions: Fresh spinach (add tender greens during the last 10 minutes of cooking), kale, red peppers, diced potatoes, broccoli, squash, beets, carrots, you name it!

Get out your crockpot and make homemade spaghetti sauce. It will cook all day and you only have to stir it once in the afternoon. I am starting mine at 8am, and I will cook my spaghetti at 5. I have the rest of the day to wrap presents and clean the house. But enjoy whatever you choose. Lots of good ideas above me.

buy a bottle of yoshida's gourmet sauce and soak chicken tenders in it for an hour or overnight. Cook some white rice and add a little yoshida's to it before serving. broil the chicken breasts. dribble a little warmed yoshida's over the chicken before serving. Serve with an asian vegetable mix.

We are having my children's favorite dish. Pizza Pasta.... I started making this many years ago and now you can find it on the "box" aisle. Spiral pasta, pizza sauce, mixed shredded cheese, sliced pepperoni, chopped onion, bell pepper, cooked Italian sausage... Throw in pan together, heat in oven (350 degrees) for about 15 minutes and you are done.... I hope you try it... Enjoy and MERRY CHRISTMAS!!!

Spaghetti and bread. It's easy and just about everyone loves it. Plus, there isn't much of a mess to clean up after and it's good as leftovers.
