It always turns brown after a few hours whether in the fridge or not. Was wondering if there was a good way to prevent this and if so how long will it stay good for?

Guacamole will only stay in the fridge for maybe a day. The only way to achieve this is to cover with plastic wrap - DIRECTLY TOUCHING the guacamole.

Lime juice will keep it from browning in the bowl while you're eating it, but won't keep it from browning in the fridge. The avocado seed - I don't know if this works. I've heard that it does, but it has never worked for me - and, in either case, won't protect your guacamole overnight.

A little more insurance: cover your plastic covered guacamole with another layer of plastic. The goal is to keep air from touching the guac: additional layers will help.

The best insurance is to make only what you need.

No matter what you do, homemade guacamole will not last long in the fridge. You can keep it for a day or two by making sure it's in a non-reactive bowl (plastic or glass is fine). If you've followed the traditional recipe for Guacamole you already have lime and or lemon juice in it so that will help. Finally, make sure the top of the guacamole is level and press plastic wrap against the whole surface up to where it touches the edge of the bowl. Get as many air bubbles out as you can because air is what makes the Guac oxidize and go brown. Put it in the back of the refrigerator because that is where it's coldest.

It is good for a few days in the fridge but the only way to keep it from turning brown is to cover liberally with lemon juice and put plastic wrap down onto the top of the guacamole itself and then cover with a lid.

You actually have leftover guacamole? Kidding.

I agree with the Saran Wrap cover idea. That and a really air tight containter. I sometime try the straw trick (suck as much air out and then close the container). Works best with a ziplock bag.

Put the seed in with the guacamole. Makes it stay green and fresh a lot longer for me.

easy...before you put in the fridge place seran wrap over the guacamole and and have it actually touch the guacamole...makes a seal (saran wrap to guac)...this shoul dprevent all air from touching it and turning it green.

You can even put a regualr lid over this...just make sure the seran wrap is touching all over the guac.

Lemon juice and leaving the seed in the guac work... but honestly... it doesnt last that long and will start looking funny after about a week or so...

And its way better freshly made!!!

putting the pit from the avacado will slow down the browning process by quite a bit. I didn't believe my husband when he told me to try it and you know, he was right, the quacamole stayed brown free for 3 whole days.Might have even been longer had my family not consumed it all!

maybe you could try and put the avocado seed in the guacamole but it probably wont last for that much longer.

All I can say is try sealing it in a tight plastic lid container and get it out of the air as soon as you can. The air is what makes it turn.
