Cilantro is definitely an herb(please don't mistake it for "Herb" the repair man down the street please). It is , if memory serves me correctly, from Italy originally. The leaves are what are used. They should, if using them in a fresh dish of salsa, be fresh, not too dried out and free of white or dark yellow blemishes on both sides before being finely crushed and added to your dish.

corriander... it is the absolute best.. and in scottland you probably can find it at an international produce market!
It must be fresh... Green leafy... and you dice is small and add to your diced tomatoes and onions and jalapanos..
Or mix in your white rice with lemon or lime juice and a little salt and pepper!
Over lamb with lemon and capers!
I have a ton of ways to use cilantro!

yes you are right it is a herb other name is green coriander leaves much similar to parsley but more intense in taste and a very strong flavor commonly used in Asian food specially Indian food.
