Actually the Navy is much more likely to use dolphins than seals, as dolphins have proven themselves to be quite useful for naval purposes for many years. So in fact most Navy seals have records created on them as opposed to the alternative of throwing them away.
On the other hand, Navy S.E.A.L.s do not have their records thrown away because it is incredibly difficult to pay someone every month if they don't have a personnel record. I'm not a S.E.A.L. , so I'm not sure what kinds of other records they might set, but I'm guessing someone somewhere is keeping records on the fastest swimmer, the deepest dive with a limpet mine, and even some unofficial records like most foreign beer consumed before falling off of one's stool. I imagine the last one would probably be classified though.

No this isn't true. This is a common ploy used by those who try to say that they were in special forces as to why they can't prove that they were in fact in. On you're DD214 it will show your service record. As far as those who are trying to be smart butts to you...it's actually SeAL it's not a true acronym. (Sea Air Land...the e doesn't stand for anything. Just thought I'd throw it back in their faces for being jerks to you.

All special forces are used by the CIA in operations banned by Congress. But the Congressmen know what is going on and privately approve of it; they have to make a show in public of being against these ops, both to appease their base, who are more interested in appearances and rhetoric, and to pretend to appease foreigners.
