My son has just been notified by his recruiter that his eyesight is below the standards for the Combat Controller career field. Should he press and ask for an eyesight waiver if the career field is critically manned?

If they could waive it, what would be the point of having the restriction? There are other options for him. Explore them.

"Where there is a will, there's a waiver." Things like color blindness for pilots is non-waiverable, but there is a waiver for almost everything else. Pilots have very strict eyesight requirements, but they can get waivers for horrible vision and lack of depth perception, etc. If your son really wants to try for combat controller, he should try to get a waiver. Also, look into PRK eye surgery. The military won't accept LASIK, but I just got PRK and I now see 20/15 (was 20/400) and am trying for a pilot slot.

No AF CC man need to have 20 / 20 vision, or very close to it. They will not give him an eyesight waiver because he needs to have great and keen eye sight to do this job. If not, he could put the lives of the pilot and the crew on deck.
