I just made a key lime pie and now I've got three egg whites left over -- what would be a good SIMPLE recipe to use them up? (besides just scrambling them, I've already had lunch LOL!) Every time I make these pies I always seem to waste the leftover whites because I can't think of anything good to do with them (and I'm not the sort of cook who's organized enough to save them for angel-food or anything like that), so I could use a couple of ideas here... Thanks!

Make meringue, beat egg whites with sugar until stiff, drop onto a greased cookie sheet one tablespoon at a time and bake until slightly browned.

Meka a Lime Meringue Pie... use the whites to make your meringue.

Otherwise, when you make the Key Lime Pie, just plan to have quiche or omelettes that night for supper, and add the egg whites in w/ whole eggs.

A topping for a cookie bar.

I just tried a recipe -- didn't like the cookie part of the recipe, but loved the egg white topping, mixed with sugar and pieces of walnuts -- has a nougat like taste -- Loved it.
I just now need to find a better cookie recipe for it.

I didn't know they could be frozen -- I'll have to try that as it would be ideal for a later-date planning.

Given they will hold up with freezing, I too would freeze them in ice cube trays -- once frozen, placing them in freezer bags.

I do this with assorted stocks (chicken, beef . .) it works great, and allows you to easily portion out to match your planned use.

Down and dirty -- place them in a coffee cup, cover with plastic wrapping, put them in the Fridge, and add them to tomorrow's scrambled egg's -- or tomorrow and the next day's.

Egg whites are good brushed on pie and pastry crust. Just toss them in the freezer (make an ice cube out of them first and place in a plastic bag).

Keep em, and make an egg white omelet tomorrow. Add them to a stir fry. How about a meringue?

You can freeze egg whites. Or, since you've got about 30 cents of egg whites there, you can toss them in the trash. The guilt you'll feel for wasting egg whites will last about 2 seconds.
