Twice Baked Sweet Potatoes
INGREDIENTS
6 sweet potatoes
2 tablespoons salad oil
1 (8 ounce) package cream cheese, softened
1/3 cup brown sugar
2 tablespoons margarine
1 tablespoon vanilla extract
3/4 teaspoon salt
1/2 teaspoon pepper
1/3 cup chopped walnuts
DIRECTIONS
Preheat oven to 350 degrees F (175 degrees C).
Rub sweet potato skins with salad oil. Wrap potatoes in aluminum foil and bake in preheated oven for 1 hour, or until soft.
Meanwhile, in a large bowl combine cream cheese, brown sugar, margarine, vanilla, salt and pepper.
Cut potatoes in half and scoop flesh into the bowl with the other ingredients. Mix well and fold in walnuts. Spoon mixture into potato skins.
Bake for 5 minutes, or until heated through.

I wonder if what you are describing as cream cheese may not actually be melted marshmallows???
You can use the topping in this recipe on any sweet potato dish.
Sweet Potato Fluff
3 cups mashed cooked sweet potatoes (8-10 fresh or two large cans)
½ cup sugar
¼ cup melted butter
1 (5 oz.) can evaporated milk
¼ tsp. kosher salt
1 tsp. vanilla
Dash of each: cinnamon, nutmeg, dry orange peel
Topping:
½ cup brown sugar
½ cup chopped pecans
½ cup flour
2 Tbsp. butter
Preheat oven to 350ºF. Combine topping ingredients w/ a fork until crumbly; set aside.
Beat potatoes well with a mixer until fluffy. Stop and remove any strings from the beater at least twice. Stir in remaining ingredients and pour into a greased casserole dish.
Sprinkle topping on potatoes and bake for 40 minutes.
Serves 8.

1 large can sweet potatoes

1 teaspoon cinnamon
1/2 cup cinnamon red hots
1 cup marshmallows
Drain 1/2 of the juice from the can of sweet potatoes. Place in a casserole dish. Dot with butter. Mix brown sugar and cinnamon together and sprinkle on top. Sprinkle with candies and add cover top with marshmallows. Cover loosely with foil and bake for 20-25 minutes at 325°F.

oh i know, it's sweet potato pie cream you mix together creamcheese, sugar, some vanilla extract and milk and pop it in the microwave for about 20 seconds then mix it all up and pour it over the sweet potatos....yummy!
