Chocolate Chip Cookies
Ingredients
•1/2 cup shortening
•1/2 cup butter
•1 cup packed brown sugar
•1/2 cup granulated sugar
•1/2 teaspoon baking soda
•2 eggs
•1 teaspoon vanilla
•2-1/2 cups all-purpose flour
•1 12-ounce package (2 cups) semisweet chocolate pieces
•1-1/2 cups chopped walnuts, pecans, or hazelnuts (optional)

Directions
In a large mixing bowl beat shortening and butter with an electric mixer on medium to high speed for 30 seconds. Add brown sugar, granulated sugar, and baking soda. Beat until combined, scraping sides of bowl occasionally. Beat in eggs and vanilla until combined. Beat in as much of the flour as you can with the mixer. Using a wooden spoon, stir in any remaining flour. Stir in chocolate pieces and, if desired, nuts.

Drop dough by rounded teaspoons 2 inches apart onto an ungreased cookie sheet.
Bake in a 375 degrees F oven for 8 to 10 minutes or until edges are lightly browned. Transfer cookies to a wire rack; cool. Makes about 60 cookies.

Giant Chocolate Chip Cookies: Prepare as directed, except use a 1/4-cup dry measure or scoop to drop mounds of dough about 4 inches apart onto an ungreased cookie sheet. Bake in a 375 degree F oven for 11 to 13 minutes or until edges are lightly browned. Makes about 20 cookies.

Macadamia Nut and White Chocolate Cookies: Prepare as directed, except substitute chopped white baking bars or white chocolate baking squares for the semisweet chocolate pieces. Stir in one 3-1/2-ounce jar macadamia nuts, chopped, with the chopped white baking bars or squares.

Chocolate Chip Cookie Bars: Prepare as directed, except press dough into an ungreased 15x10x1-inch baking pan. Bake in a 375 degree F oven for 15 to 20 minutes or until golden. Cool in pan on a wire rack. Cut into bars. Makes 48 bars.

There is a really easy and quick peanut butter cookie recipe that uses 1 cup of peanut butter, 1 cup of sugar and 1 egg. You just mix the ingredients together with a wooden spoon (do not use a mixer, for some reason it makes the texture diff and it doesn't work) and drop 1 inch balls onto a cookie sheet about 2 inches apart. Sprinkle with sugar, and make cross marks on top with a fork. Cook in a 350-375 degree oven for about 10-12 minutes. Let them cool about 5 minutes before taking them off the cookie sheet. The recipe makes around 1 or 2 dozen cookies. I think that's it, but if I remember anything later I'll be back.

Chocolate Macaroons

1/2 cup flavorless vegetable oil
2 cups granulated cane sugar
4 squares unsweetened chocolate
4 extra large eggs
2 teaspoons vanilla extract
2 cups unbleached flour
2 teaspoons baking powder
a pinch of fine sea salt
a large bowl of confectioners sugar

Combine oil, sugar and chocolate. Beat in the eggs, one at a time. Add the vanilla. Sift the flour with the baking powder and salt. Stir into the chocolate mixture.

Chill the dough thoroughly (at least 4 hours).

Preheat oven to 350 degrees F. Make small balls (about the size of a walnut) and drop into a bowl of confectioner's sugar to coat. Bake on a greased cookie sheet for 12 to 15 minutes. Cool on wire racks.

they sell precut sugar cookies with icing packets included. look at walmart in the refrigerated cookie dough section.

It don't get no easier than that.

An odd sounding but delicious recipe I accidently made while cooking chocolate chip cookies. It may sound gross to yu now, but once you make it, you'll want more!

3 tablespoons peanut butter
2 Tablespoons INternational Delight French Vanilla Coffee Creamer


Preparation:
First, put the cookie dough in a microwave safe medium bowl and cook for 20-30 seconds on high. Remove from microwave and stir until chocolate chips have blended with the dough. Add the peanut butterand French Vanilla creamer to the cookie dough and mix. Let sit for 1-2 minutes to harden and place on an ingreased baking sheet, cooking for 9-11 minutes at 350 degrees. Let cool for 5 minutes and transfer to cooling racks and let cool an additional 2 minutes. Enjoy!

In a medium mixing bowl, beat butter and margarine until creamy. Add sugars mixture, cinnamon, peppers, and vanilla. Beat on high speed for about one minute. Beat in egg white. Stop the mixer. Add the flour mixture. Beat on low speed just until incorporated. Gather the dough together with your hands and form it into a neat 9 to 10-inch log. Wrap in waxed paper. Fold or twist ends of paper without pinching or flatting the log. Chill at least 45 minutes, or until needed. Place oven racks in the upper and lower third of the oven preheat to 350 degrees. Line cookie sheet with parchment paper or aluminum foil. Use a sharp knife to slice rounds of chilled dough a scant 1/4-inch thick. Place 1-inch apart on prepared baking sheets.
