Anything that is in the "danger zone" between 41 and 140 degrees for more than 6 hours is considered unsafe to eat. That is the temp range that it is easiest for bacteria to grow.

Over night is fine but it will not last as long in the fridge. Better to cool it down after everybody is done eating

i usually pack it into the storage containers and leave it out till cooled (about an hour) then its straight to the fridge, if i forget it on the counter I put it in the trash, better safe than sorry
