Alpha-linolenic acid is a fatty acid found in many foods. Most, but not all, studies have found that high dietary or blood levels of alpha-linolenic acid correlate with an increased risk of prostate cancer. There is no convincing evidence, however, that this association reflects a cause-effect relationship. Concentrations of alpha-linolenic acid are high in almonds, Brazil nuts, cashews, flaxseed, hazelnuts, macadamia nuts, peanuts, pecans, pine nuts, pistachios, and walnuts. Many health benefits have been attributed to eating nuts, and the available evidence does not suggest that people attempting to prevent prostate cancer should avoid nuts.

I've never heard of roasting them. They taste great the way they are. Roasting may remove some of the benefits so, I would just eat them the way they are.
