Jackie, this is so simple and delicious you will love them. First of course cut the top of pepper off and set aside. clean pepper of seeds and scrape sides with a spoon to clear the veins on sides. Next put all peppers in a large cupcake pan standing. I found it works great. cover and put in 350 oven while you prepare a box of spanish rice as the box says. Add two cups of mild salsa thick and chunky to the rice when finished. I also fry up some sausage to put in the mixture. combine it and spoon half pepper full in all peppers.. then add your fave cheese grated on top of mixture. finish filling peppers and bake with lids back over then 20-25 min. the tops keep it from drying out. remove from oven and toss tops in trash if you want and add a layer of cheese to the top. maybe serve a salad on the side.

This is sooooooo easy and very good.

Prepare your peppers for stuffing.

Cook some pasta of your choice, I use linguine. Mix with some pasta> any meat you want such as shrimp, crab, ham, pistrami, turkey ...whatever.

Stir in some melted butter with 1 egg yolk, some milk to make it saucy and some Parmesan cheese. Stuff your peppers with this and bake for 20 minutes @ 350*

You can add any kind of cheese if you are brave enough to experiment. Muenster cheese is fabulous as well as provolone.

I used to make them when I was young for my mom and I got a good recipe out of her red and white book... better homes and garden?? I'm pretty sure. If you could find that book.. Just a suggestion.

try cutting in half de seed ,add one tomato (cut in half cut side up) thinly sliced garlic to your taste,finely chopped anchovie,between one and two per pepper half, and plenty of good virgin olive oil,bake and enjoy
