We just made an angel food cake, so we used twelve egg whites. What can we do with the yolks?

This site has plenty of ideas for what to do with them. Check it out. I recommend the creme brulees though.

6 large egg yolks
6 tablespoons sugar
1 vanilla bean, split lengthwise
1 1/2 cups whipping cream

6 teaspoons granulated sugar (or 8 -12 teaspoons packed brown sugar).

Preheat oven to 325°F.

Whisk yolks and 6 tablespoons sugar in medium bowl to blend. Scrape in seeds from vanilla bean. Gradually whisk the cream into the sugar. Divide mixture among 6 - 3/4 cup custard cups or ramekins. Arrange dishes in 13x9x2-inch baking pan. Pour enough hot water into pan to come halfway up sides of dishes.

Bake custards approximately 35-40 minutes until the custard is set. Do not overbake or your custard will be rubbery. Remove the pan from the oven and remove custard cups from the water. Allow custards to cool before placing in the refrigerator. Chill overnight.

Two hours before serving:
Preheat broiler. Sprinkle 1 teaspoon sugar atop each custard. Place dishes on small baking sheet. Broil until sugar just starts to caramelize, rotating sheet for even browning, about 2 minutes. Chill until caramelized sugar hardens, about 2 hours.

Hi, I'm from the Philippines, that's why when I read your question, a particular recipe came to my mind when you said that you used 12 egg whites. This recipe for a Filipino type of custard called Leche Flan (Caramel Flan) uses 12 egg yolks. :)

Original Leche Flan - Philippines.
6 servings 1½ hours 20 min prep

Caramel
1 cup sugar
1 cup water
Custard
12 egg yolks
1 (14 ounce) can condensed milk
1 pint milk
1 tablespoon vanilla

Caramel:
Put sugar and water in a saucepan. Caramelize on high heat. Line loaf tin with caramel. Be sure to line the sides of the pan.
Custard:
Blend all ingredients in a blender. Pour mixture into caramel lined loaf pan.
Cover with aluminum foil. Place tin in a larger baking pan half filled with water. Place pan in pre-heated oven at 375 degrees, and bake flan for about 1 hour or until firm.
Place serving dish over top of loaf pan, and invert. Flan will easily plate, and the caramel provides a wonderful sauce.

Note: you could opt not to use a blender for the custard; mixing the custard ingredients gently by hand would make the flan creamier :)

Chocolate Mousse

RECIPE INGREDIENTS

1 1/2 pounds semisweet or bittersweet dark chocolate
1/2 cup brewed coffee
1/2 cup Scotch whiskey
4 egg yolks
1 cup heavy cream
1/4 cup sugar
8 egg whites
Pinch of salt

Strawberries and whipped cream, for serving (optional)

RECIPE METHOD

Melt the chocolate in the top of a double boiler or bain marie over low heat, or in the microwave on low power. Stir in the coffee and whisky. Cool to room temperature. Beat in the egg yolks, one at a time.

Whip the cream until thick, gradually adding the sugar until stiff peaks form.

Beat the egg whites with a pinch of salt until stiff. Fold the egg whites into the cream.

Fold this mixture into the chocolate mixture. Pour into 6 individual serving glasses and refrigerate for 2 hours before serving.

Hollandaise for two people uses 3 egg yolks. Whisk them with 1 Tbsp of lemon juice on very low heat, with 1/4 cup of real unsalted butter cut in pats. Whisk constantly as it heats, and add 4 more Tbsp of butter one at a time while whisking until each one melts.

Simple, but you have to whisk practically constantly, but so good over any green veggie. And you can double or triple the recipe for the number of people.

12 EGG SUGAR COOKIES

1 c. sugar
1 c. brown sugar
1 1/2 c. shortening
12 egg yolks
2 tsp. lemon flavoring
3 1/2 c. flour
1/2 tsp. salt
2 tsp. soda

Cream sugars and shortening together. Beat in egg yolks and lemon flavoring. Stir in dry ingredients. Form in small balls and roll in sugar. Press flat with bottom of glass. Bake at 350 degrees for 10 minutes or until lightly browned. Makes about 6 dozen cookies.

It means 1 whole egg and the yolk of another - so get the second egg and separate the white and the yolk.
