Beer is like everything else...based on personal taste.
Beer's flavor comes from several different parts in the brewing process. The yeast determines what type of beer it will be; whether the beer is an ale, porter, stout, etc. Each type yeast will give the beer a different flavor. Hops is primarily where flavor comes from. There are many types of hops. Many common beers aren't very hoppy... the home brewed or micro brewed beers can be more hoppy in flavor. (Hop gives beer the sort of bitter taste.) The types of grain used as well as the type of processing used effects the flavor of the beer. The darker the grain, the darker the beer. Another thing that changes the flavor of the beer is the sugars used in the brewing process. The sugar is the food that feeds the yeast. The by-product is alcohol. Which is why each beer has a different alcohol content.
