My extended family gets together the day after Christmas. We bring several appetizers, desserts, and then sevral pots of soup. I need ideas for an appetizer to take that is easy but a little different. It seems like a rotate thru the same 5 or 6 things all the time. Thanks for any ideas you can pass along.

Mini-Quiches

Ingredients

8 oz Cottage cheese-small curd
1/4 c Sour cream
4 oz Shredded sharp cheddar cheese
1/2 c Bisquick (or the like)
1/4 c Melted butter
3 Eggs
Preheat oven to 350 degrees. Mix all ingredients with
Electric mixer. Grease mini-muffin tins or use Teflon ones.
Fill 3/4 full. Bake for 15-20 minutes or until brown.
Hints: Add onion, bacon, mushrooms,etc. May be frozen.
Reheat at 300 degrees or microwave for 3 minutes on high.
Note: These are great! Be sure to add cooked bacon and
Some diced onion. This recipe only makes about
1 1/2 Dozen so be sure to at least double! Great Starter

You can't go wrong with an antipasto platter and some simple pannini sandwiches. Here's the grocery list: 1 bunch celery 1 pound carrots 1 package breadsticks(from the cracker aisle) 1 large jar olives, or just buy a bunch of mixed olives Sausages (pepperoni, salami, summer sausage..you choose) 3 different types of cheeses, your choice 1-2 loaves french bread 1 container sun-dried tomatoes 1 jar artichoke hearts 1 jar roasted red peppers 1 15oz. can black olives For presentation, put the breadsticks upright in a drinking glass. Cut the carrots and celery into sticks and put them in another glass. Put the olives in a bowl and if they have pits, but an empty bowl next to them. Slice up the sausages and cheeses(if they aren't sliced already) and just lay them out on a platter or just a huge cutting board. Put the sun dried tomatoes and artichoke hearts on the platter as well. Slice up the bread in order for people to make sandwiches. (You could also ask the person at the bakery counter in the store to slice it for you) Put the roasted red peppers into the blender and blend into a paste. Then put the paste in a bowl with a spoon for serving. Wash out the blender and then put the black olives in. Blend them into a paste and serve them in a bowl with a spoon as well. People can just much on the meats and cheeses as a little snack, or they can put the red pepper or olive paste on the bread slices and add their meats and cheeses. My Sister makes this one every Christmas Eve....everyone LOVES it!

ALMOND PINECONE DIP:

1 1/4 cups whole natural almonds
1 (8 oz.) package cream cheese, softened
1/3 cup mayonnaise
5 crisply cooked bacon slices, crumbled
1 Tablespoon chopped green onion
1/2 teaspoon dill weed
1/8 teaspoon pepper
Assorted Crackers for serving

Spread almonds in a single layer in shallow pan or cookie sheet. Bake at 300 degrees for 15 minutes, stirring often, until almonds just begin to turn color.

Combine softened cream cheese and mayonnaise; mix well. Add bacon, onion, dill and pepper; mix well.

Cover and chill overnight.

Form cheese mixture into shape of pinecone on serving platter. Beginning at narrow end, press almonds at a slight angle into cheese mixture in rows. Continue overlapping rows until all cheese is covered. Garnish with artificial or real pine sprigs that have been cleaned. Serve with assorted crackers.

Stone crab salad:
1 1/2 pounds picked stone crab meat
4 ounces chopped onion
4 ounces chopped celery
Pinch fresh chopped cilantro leaves
Mayonnaise, for binding
Serving suggestion: assorted crackers
In a medium mixing bowl, combine all ingredients, using just enough mayonnaise to hold everything together. Place in a serving bowl and chill for at least 30 minutes. Serve with your favorite crackers as an appetizer.

BLT Appetizer Recipe :
1 cup mayonnaise
1 cup sour cream
Iceberg lettuce, shredded
2 large vine-ripe tomatoes, chopped
1 pound lean bacon, cooked crisp and crumbled
Sea salt bagel chips

Combine the mayonnaise and sour cream in a small bowl with a snap-on lid. When well mixed, refrigerate until serving time. When ready to serve, place the mayonnaise mixture in a large serving bowl. Top with the lettuce, tomatoes and bacon. Serve with bagel chips.
Sugar and nut glazed brie:
1/4 cup packed brown sugar
1/4 cup chopped macadamia nuts or pecans
1 tablespoon brandy
1 (14-ounce) round brie
Apple wedges, for serving
Pear wedges, for serving
2 to 3 tablespoons lemon juice
Crackers, for serving

In a small bowl stir together the sugar, nuts, and brandy. Cover and chill for at least 24 hours or up to 1 week.
Preheat oven to 500 degrees F.

Place the brie on an ovenproof platter or pie plate. Bake for 4 or 5 minutes or until the brie is slightly softened. Spread the sugar mixture in an even layer on top of the warm brie and bake for 2 to 3 minutes longer, or until the sugar melts. Brush the fruit wedges with lemon juice and arrange them around 1 side of the brie. Place crackers around the other side.

I take a can of crescent rolls and roll them out and tear apart. Then cut each one in half long ways. Now instead of 8 you have sixteen pieces. Now press on each one to flatten out and make wider.
Take 1 lb. of ground chuck and add 1 pkg of onion soup mix to it, do not add any other spices, the soup has all kinds in it. Now mix together and form approx. 1 inch balls and roll up into the crescents and bake on cookie sheet in 350 degee oven and bake for approx. 15 min. or until rolls are brown. Serve hot with or without dip or sauces of your choice. They are quick, easy and delicious.
Here is another one, you can make "PinWheels". Take 1 pkg of cream cheese, add 1 8 oz pkg shredded cheese, diced wafer ham, jalepenos, how many depends on how hot you like it. Mix this all together and then spread it on floured tortillas, kinda thin. Then roll up the tortilla and slice about 1/8 of in. wide or whatever size you want them. Serve with salsa or cheese sauce. They get even better if you cover them and let them sit over night.

My family loves this chili dip with tortilla chips.

1 can chili (no beans)
1 8 oz. package cream cheese
8 oz. medium salsa (do not use a fruit flavored salsa)

Dump all ingredients into a pot and heat through while stirring. You can keep it warm in a fondue pot or a crock pot.
