...it makes sense that chefs have to keep hair out of the food they're cooking. But why the tall, bulbous-ended, stovepipe white cap?

The tall chef's hat was originally used by the head chef so he could easily be picked out of the kitchen crew, sort of an emblem of distinction. If the waiter or patron needed the head chef, they knew who it was and could find him, over the crowd of kitchen workers, by the tall hat.

As for the bulbous nature, when inverted, the puffy tops of these hats can hold items temporarily like a pocket on the top of your head! Also, the taller the hat, the deeper the pocket and more room to hold items!

Who knew? Chefs started out wearing simple skull caps, with each level of chef represented by different colors. The cap gained some height not as a stylish statement, but simply to allow more ventilation around the chef's head. Functionalism was ultimately overtaken by fashion as caps gradually grew higher and higher. Viennese chef Antonin Careme set the ultimate standard by propping his cap up with a piece of cardboard, and chefs have followed suit for centuries, though the cardboard has since been replaced by starch.

I guess, the chefs long time ago were ladies who had to hide their long hair inside the tall white hats. When the guys took over the job, they just continued the tradition. Well, anyway it is the guys norms to take away whatever that is a ladies' and make it their own. I wonder, why dont they start inventing their own hats! Oopps, I forgot that it would be too challenging for them or they might just come up with a cap all we ladies here would end up with hair in our soup and food!

I don't know why it's tall, but I do know that there are 100 folds in it, which signifies the 100 different ways to cook an egg.

so when you are yelling (at line cooks & silly servers) the steam has some where to go instead of out your ears. because you might burn some one that way..................... hay that's the truth
