eggs and/or most cheese, and/or most veggies.,and/or most meat,baked or fried potatoes or hash browns work too. omlet if you have biscits, begeals, dinner rolls, or most bread turn it into a breakfeast sandwitch, tortillas turn it into a breakfeast burreto/ roll up
oat meal you can add cinnoman & any kind of sugar and/or vanilla and/or bannas, raisons appels ,allmost any fruit
eggs and bread, cut circel out of middel of bread butter bread,first, warm up skillet with melter butter(can use oil or saved bacon drippings) place egg in to skillet add egg into the center, if you like scrambled beat the egg first, flip 1/2 through when egg is done place on plate place piede you cut out on top campers eggs and toast. If you like, you can toast bread befor buttering and cutting circle out of middel

If you had Pot Roast the night before you can...

Fry some leftover PotRoast
Fry some bacon and sausage
Optional: Tomatoes & onions & mushrooms
Shredded Cheddar Cheese
========================
scramble 3 eggs in a bowl and put into hot pan (let it sit to solidify)
flip the egg
place about 3/4's of the fried meats (and veggies) into the egg
fold one side up and press lightly until it holds
Do the same with the otherside
Place the egg on a plate (folded side down)
put the rest of the toppings
finish it off with shredded cheddar cheese
viola! A poor mans Colorado Omelet!
Tastes great with Tobasco or Cholula!

You can use many different meats or non at all for this, but for this recipe I am using shrimp.
Ingredients:
1- Shrimp (1/2 cup)
2- Chopped onion and mushrooms(1/4 cup each)
3- Chopped hot peppers (1/8 cup) Optional
4- Chopped water chestnuts (1/4 cup)
5- Green peppers (1/8 cup)
6- Canola or Olive oil (4 tbsp)
7- Chopped cheese of your choice (1/4 cup)
8- 4-eggs (beat)
9- 1/8 cup milk
Instructions:
1- Heat 2 tbsp oil in a non-stick skillet over medium heat
2- Add ingredients 1-5 and simmer for 2-4 minutes or until hot.
3- Meanwhile mix milk and eggs in a bowl well.
4- Remove ingredients from pan and drain on paper towel.
5- Heat remaining 2 tbsp oil in skillet over medium heat.
6- Add eggs and milk and heat until begins to start to look partly
done. (About 21/2 to 4 minutes)
7- Add first 5 ingredients and cheese and fold over.
8- Cook on first side for about 2 minutes and turn over.
9- Cook on second side for about 2 minutes.
Serve with wheat toast and Texas Pete. MMMMMMM

Potato Casserole......You can mix this the night before.....
32 oz small cubed oreida hashbrowns
2 cups shredded cheddar cheese
1 small onion diced very fine
1 can creme of chicken soup
8 oz sourcream
Spray 9 x 13 dish with nonstick spray
Mix all ingredients and pour in dish......
bake 1 hr 30 min at 325 (If dish is cold add 15 minutes)
Opt topping....3 cups crushed corn flakes
1 stick melted marg
Toss cf crumbs in marg......spread on top of casserole 20 minutes before baking is complete....return to oven and finish cooking......YUM!!!!
You can also add diced ham, crumbled bacon, or scrambled and drained sausage to pot mixture.....If you do, don't use topping

A family favorite is my Cheese Rounds.
It's french toast made with Italian bread instead. Cut into slices and prepare like french toast. Melt a slice of cheese on top. Sprinkle a pinch of Parmesan cheese for looks and flavor. Then lightly dribble with honey or maple syrup. Awesome!

This soluble fiber found in oat-bran bread helps lower cholesterol
Tomato & Bacon Strata (Servings 8)
4 large eggs
4 large egg whites
1 1/2 cups milk
1 1/2 tsp curry powder
1/2 tsp salt
1/8 tsp black pepper
2 tsp vegetable oil
10 slices oat-bran bread
2 tomatoes, thinly sliced
1 cup shredded sharp cheddar cheese (4 ounces)
4 strips turkey bacon
1. In large bowl, whisk together eggs, egg whites, milk, curry powder, salt, and pepper.
2. Grease 13x9x2-inch baking dish with oil. Arrange 5 slices of bread in single layer in bottom of baking dish, cutting 1 slice to fit, if necessary. Layer tomato slices over bread. Scatter 1/2 cup cheese over top. Repeat layering. Pour egg mixture over bread. Gently push down bread into liquid. Liquid should come almost to top of bread. Cover and let stand 1 hour or refrigerate overnight.
3. Preheat oven to 350F. Uncover strata. Bake for 45 to 50 minutes or until puffed and golden. For last 10 minutes of cooking, arrange bacon on top. Let stand 10 minutes before serving

STRATA!! It's like an egg casserole, and in most cases can be made the night before so all you need to do is pop it in the oven the next morning. Great for Overnight guests! Usually only one pan to clean. Here's a link to some awesome recipes!

Do you like oatmeal?? In Sunday morning, I like to fix oatmeal and serve with butter and honey toast.
<<<<<<< Egg drops oatmeal >>>>>> serves 2
8 to 12 tablespon of Quaker oatmeal
250 ml fresh milk (or skimmed milk)
2 eggs, slightly beat
sugar to taste
1 litre water
1) Heat water in a pot over high heat, add oatmeal into boiling water, bring to boil, reduce heat to low, slimmer for 45 minutes till oatmeal turned to transparent, stir ocassionally
2) Turn heat to medium, add milk, bring to boil, turn off heat, add egg mixture, stir quickly to make egg drops.
3) Add sugar to taste (you may also add honey), serve hot.
In weekdays, I like to reheat homemade muffins and have banana smoothy (banana blends with skimmed milk and tofu) in the morning. Here is the recipe for blueberry muffins.

400g plain flour
175g caster sugar
1 tablespoon baking powder
1 finely grated rind of lemon
1/2 teaspoon salt
284ml carton buttermilk
2 eggs, beaten
85g butter, melted
250g fresh or frozen blueberries, used straight from frozen
1) Preheat the oven to 200 degree C / Gas 6 / fan oven 180 degree C. Butter a 12-hole muffin tin.
2) In a large bowl, combine the flour, sugar, baking powder, lemon rind and salt. In a separate bow, mix together the buttermilk, eggs and butter.
3) Make a well in the center of the dry ingredients and pour in the buttermilk mixture, stir until the ingredients are just combined and the mixture is quite stiff, but don't over-mix.
4) Lightly fold in the blueberries, then spoon the mixture into the tins to fill generously.
5) Bake for about 25 minutes or until risen and pale golden on top. Leave to cool in the tin for about 5 minutes before turning out on to a wire rack, as the muffins are quite delicate when hot.

Mix scrambled eggs with crumbled sausage, green peppers, red peppers, onions, and at the end cover with cheese, then when serving offer a salsa to pour over the top.
