I have two data sets, I need to show the difference in peaks in their log normal curves, and I'm having problems firstly sorting the data into more than 10 bins as it seems to ignore whatever I type into the helpful 'how many bins' section. Secondly how do I get them both into the same histogram? Step by step instructions would be very useful as I'm hopeless with this stuff.

No, they do not. That said it may take some work to get the same standard deviation in a problem. Let us consider the set. {9, 10, 10,10, 11} the mean is 10 and the standard deviation is .6325. {9,9,10,10,10,10,10,10,11,11} is a set with 10 points, which would have a different histogram. It will have the same basic shape, but will not look exactly alike. More generally, we need to solve for n such that the mean is 10 and the standard deviation is the same. {10 - n, 10, 10, 10+n} clearly the mean is 10 and the number of points are different so the sets and consequently the histograms. Hope this helps.
