This is the recipe my grandmother uses every Thanksgiving. She always stuffs the turkey, but anything that doesn't fit is baked in a casserole dish.
Grandma’s Stuffing
Ingredients:
1 2-lb Bag Yellow Onions
Cooking Oil
1 Bunch Celery
1-lb Pork Sausage
1 Loaf Stuffing Bread
(If you can’t find stuffing bread – out of season – a 1-lb loaf of white bread works, too. Do not use croutons! They’re crap.)
1 tsp. Sage or Poultry Seasoning
Directions:
1. Break up bread and leave out in bowl.
2. Chop onions in food processor. (Enough to fill 12-inch frying pan)
3. Slice celery and add to onions with a little oil in frying pan.
4. Cover and cook until soft.
5. Add pork sausage to onions/celery and cook.
6. Turn off frying pan and let cool.
7. Pour over bread.
8. Add sage or poultry seasoning and mix together well (with hands in plastic baggies).
9. Bake in casserole dish at 350° until heated. (I've never made it this way so I don't know exactly how long.)

Try the following
pork, sage and onion stuffing:
2 lb (900 g) good-quality pork sausagemeat or finely minced pure pork
1 heaped dessertspoon dried sage
1 large onion, grated or very finely chopped
4 heaped tablespoons white breadcrumbs
1 egg, beaten (optional)
salt and freshly milled black pepper
To make the stuffing, combine the breadcrumbs with the onion and sage in a large mixing bowl, then stir in a little boiling water and mix thoroughly. Next work the sausagemeat or minced pork and egg, if using, into this mixture and season with salt and pepper. Leave the stuffing covered in a cool place – but not in the fridge, as it shouldn't be too cold when you come to stuff the turkey.
OR American Turkey Stuffing
Ingredients
2 oz (50 g) butter
8 oz (225 g) onions, chopped fairly small
4 sticks celery, cut into ½ inch (1 cm) chunks
1 lb (450 g) best-quality thin pork sausages, skinned and sliced into ½ inch (1 cm) chunks
6 oz (175 g) white bread, cut into ½ inch (1 cm) cubes
8 oz (225 g) Bramley apples, cored and chopped
4 oz (110 g) walnuts, chopped
1 level dessertspoon chopped fresh thyme
grated zest 1 small lemon
½ level teaspoon ground mace
1 egg, beaten (optional)
salt and freshly milled black pepper
Begin by melting the butter in a large frying pan and lightly fry the chopped onions, celery and chunks of sausage until they become golden at the edges (this will take about 10 minutes). After that tip these into a large mixing bowl and add all the remaining ingredients. Mix very thoroughly, seasoning well.

1 lb. sausage roll
1 loaf bread
1 onion, chopped
3/4 c. celery, chopped
1 tsp. salt
1/2 tsp. pepper
2 eggs
1 tsp. poultry seasoning
Cook sausage meat in water to cover in frying pan. Bring to boil and drain water. Add water to cover sausage meat again and simmer until sausage is cooked. Save water to use with bread. Dry bread in oven (250 degree temperature) or toast bread. Crumble bread into cooled water from sausage. Add eggs, slightly beaten; mix well. Add other ingredients. Mixture should be moist and soft. Do not stuff turkey until ready to cook.

1.put bread and paxo into a basin and dampen
with a little boiling water ( not to wet )
2. add chopped up onion,and mix together
3. put a little oil into a frying pan till it smoky
and mix in the mixture.
4. put in a dish and bake in the oven ok.

What my mum does is buy about 2 loafs of bread (fresh) then leaves them over a few nights to harden up. Then she cuts all the outer crust from all around it, wshe chops up loads of onions and boils them then adds sage and the onions to the choped up bread then pors hot water over it all and adds a bit of salt and pepper, mixes it all together then cooks ina tray in oven, i tell you its absa;lotly delicious!
