which do you think is the beter option, i will be using it for general kitche duties so it has to be durable, and i also want it to be a gloss finish

I'd use neither, instead, 2or 3 coats of polyeurethane, sanding w/ 220grt in between, then a final coat of polycrylic. Wetsand that and there you go. Varnish is either going to be colored, or will color over time, epoxy is an adhesive, not a surface.

They make a two part epoxy polyurethane. You just pour it on. It is very shiney and very tough. It is scratch resistant and any time you want to smooth out a scratch or cut all you need to do is heat it with a tourch and it levels out again. Even cigerette burns.

The draw back is it is not removeable easily. It is also expensive. I had it on a bar top I made and it was great. It also darkens up the color of your top a little.

well it won't shine but I'd use a mineral oil. Most other methods will either spoil or contaminate food mineral oil won't, you have to keep seasoning it until its soaked in really good then when needed
