2 cups organic self raising flour
pinch of salt
1/2 cup butter
4 tablespoons caster/superfine sugar
1 organic, free-range egg yolk
a little grated organic lemon rind

Sieve the flour and salt together in a bowl.
- In a mixing bowl cream the butter and sugar together with a wooden spoon until the mixture becomes light in colour and fluffy in texture.
- Stir in the egg yolk with a tablespoon of flour and then beat well.
- Stir in the lemon rind and the rest of the flour but do not beat.
- Put onto a floured board and roll out to one eighth inch thickness.
- Cut into rounds and place on a greased baking tray.
- Bake at 145 degrees centigrade (see temperature conversions) for about 20 minutes.

Shrewsbury Biscuits

225g (8oz) Self Raising Flour
110g (4oz) Butter
110g (4oz) Castor Sugar
1 Egg Yolk
Grated Lemon Rind
Pinch Salt

Pre-heat oven to 140°C: 275°F: Gas 1.
Cream together the butter and sugar, until light and fluffy.
Sift flour and salt together.
Add the egg yolk with a tablespoon of flour and beat well.
Fold in the remaining flour and lemon rind.
Roll the dough on a lightly floured surface into ¼ inch thickness; cut into rounds.
Place on a greased baking tray.
Bake for 20 minutes.
Allow to cool for a few minutes then remove to wire racks.
