Hmm. Date is expired, but no smell or discoloration. Can you make mac and cheese without butter?

To be on the safe side, turf it out if it has gone past the expire date.

Mmm, I mean, yeah, after you leave it sit out on the counter for like a year.

But I always leave my butter sit out in a butter container with a lid ('cause I hate cold butter that won't spread) and I've never, ever had a stick of butter spoil on me. Even if you leave it sit out, as long as you use it intermittently, it should be fine. Fat isn't really that prone to spoiling.

P.S. If it's expired but doesn't smell weird, I'd say it's okay. I've eaten store-expired eggs many a time; you can tell when they're bad because they reek. You can definitely make mac and cheese without butter; just use extra milk or something. You probably won't even tell the difference.

If the butter has been kept refrigerated and not left out to keep it soft, it should be fine. Probably would not make you sick anyway. People have been eating rancid butter on popcorn at the movies for years.

Yes, butter is actually food. It can go bad. Margarine on the other hand is just plastic. Leave it out and it doesn't change. I think they make it out of recycled Tupperware (no offense to Tupperware meant)

Improperly refrigerated butter will go rancid with time. Let your nose be the judge, if it doesn't smell of butyric acid it is probably all right to eat.

Hi! Yes it does! If it becomes soft or melts, then hardens, then melts again... it goes rancid!
It keeps almost forever in the fridge or freezer!
:o)

Yes! Leave it on the counter for a couple days and you will notice the green-blue mold that grows rather rapidly.
