Butter and sugar should be creamed together and then brandy added gradually, beating well in between each addition. If it curdles, then too much brandy has been added at once and you haven't used enough elbow grease!
My mother's recipe is caster sugar, unsalted butter and brandy. Nobody in their right mind would heat this! The butter should be softish but not runny, creamed with a wooden spoon. The sugar helps to aerate the butter and allows the brandy to be incorporated bit by bit.
The consistency should be that of stiffly whipped cream, so that it can be piled on a plate, sprinkled with a scrape of nutmeg and put in the fridge to harden.

get your butter (unsalted pleeeeeez), icing sugar, brandy and almonds beaten together. It is the almonds that stop the curdling. Anything liquid with butter curdles so it needs the ground almonds to hold it together. Hope that helps. Try making a small amount this way to experiment, but i think I am right. dont let it bubble at all
keep stirring it
do NOT add lemon juice
use it within 20 minutes of making it
do not reheat it
buy a quality branded product

If you whisk it up quickly enough, with enough vigour, it won't curdle.
You can also use RUM.
