My Mum makes THE BEST bread sauce.....

I don't know the full recipe (I think she follows Delia's) but I do know the secret - stud half an onion with cloves add to a pan of milk & cream, chuck in a couple of bay leaves and some whole pepper corns and simmer for an hour.......

Leave the onion & bay leaves in the milk and pan and put in the fridge overnight.

Make your bread sauce using this flavoured milk the next day....

I fry a well chopped onion in a small amount of oil. then I add milk, depending on the amount of sauce wanted, then as the milk heats up, I add torn up slices of bread without the crusts until there's enough to thicken it. Salt and pepper, if it's too runny, add another slice of bread, if it's too thick, add more milk.
