I used to work at a Black Eyed Pea restaraunt and they served it there and it was so good. But where I live now, they don't have Black Eyed Pea. Anyone know how to make this dish? Please tell me the recipe if you know! Thanks

2 pounds yellow squash, chopped
1 onion, chopped
1 (10.75 ounce) can condensed cream of mushroom soup
2 cups shredded Cheddar cheese
2 eggs, beaten
1 1/2 cups seasoned croutons
DIRECTIONS
Preheat oven to 350 degrees F (175 degrees C).
Bring a large pot of salted water to a boil. Add squash and onion and cook until tender but still firm, about 15 minutes. Drain and transfer to a 2 quart casserole dish.
In a medium bowl combine soup, cheese and eggs. Mix well and pour into dish with squash.
Bake in preheated oven for 25 minutes. Remove from oven and sprinkle croutons on top. Return to oven and bake for 20 minutes more.

Amish Squash Casserole
2 pounds yellow squash, sliced
1 small onion, chopped
1 small bell pepper, chopped
2 teaspoons olive oil
1 teaspoon salt
1 teaspoon white pepper
1 1/2 pounds cheddar cheese
1 cup Italian bread crumbs
Preheat oven to 350 degrees F.
Saute squash, onion, and pepper in a saute pan with olive oil until squash is soft. Add salt and white pepper. Put into a casserole dish. Mix the cheese and 1/2 cup of bread crumbs into the casserole dish with the vegetables. Sprinkle remaining 1/2 cup of bread crumbs on top of casserole. Bake until golden brown.

Squash Casserole
Serving Size : 8

2 lbs yellow squash or zucchini (older larger squash may be used here), cleaned and cut into 1/2-inch rounds
1yellow onion, peeled and cut into large dice
1 1/2 tablespoons salt
1 1/2 cups fresh breadcrumbs
3 large eggs, lightly beaten
1 cup heavy cream
1 teaspoon fresh thyme leaves
1 cup shredded sharp cheddar cheese
1 teaspoon freshly ground black pepper
Pinch cayenne pepper

Preheat the oven to 350°. Place squash and onion in a medium saucepan, and cover with water. Add 1 tablespoon salt, and bring to a boil. Reduce heat, and simmer until tender, about 20 minutes. Drain well, and transfer to a large bowl.

Add 1 cup breadcrumbs, eggs, cream, thyme, 1/2 cup cheese, black pepper, cayenne pepper, and remaining teaspoon salt. Gently stir to combine. Pour into a 2-quart shallow baking dish. Spread remaining 1/2 cup cheese and remaining 1/2 cup breadcrumbs over top. Cover, and bake until set, about 30 minutes. Uncover, and continue baking until top is browned, about 10 minutes more.

this squash casserole is absolutely delicious. my kids even ate it
BAKED SQUASH CASSEROLE
INGREDIENTS

6 med yellow squash, can use sqash, broccoli, or asparagus
1 can cream mushroom soup
3/4 cup grated cheese
2 hard boiled eggs chopped
1 cup bread or cracker crumbs{maybe ritz}
1 heaping T oleo

Melt 1/2 cup oleo in casserole and line with bread crumbs. Alternately, add squash,
hard boiled eggs and can of mushroom soup. Cover with remainder of crumbs,
grated cheese and dot with oleo.
Bake 45 min at 300* oven. serves 6
