"Seedless" watermelons have seeds...they're just small, white and very soft, so you don't have to spit them out. Kinda like bananas -- you probably don't think of them as having seeds. They do, but they're so small, you don't notice them.

I was told that when the baby melon first appears on the vine, you place a paper bag over it & allow it to grow to maturity in the bag. It will still have a few seeds, but not many
