Apparently you've never seen anyone make sausage. Your body can eat just about anything. people can keep alive drinking urine. A little mold won't even bother your stomach, as long as it is edible. Some molds are edible and some aren't. Cheese mold is edible. That's all.

Your question is not exactly quite right. Cheese is not mold, though some cheese, such as bleu cheese, contain mold. Or may have a slight mold formed on the outside of the casing, though you don't actually eat that part. However, the mold contained in bleu cheese is not like the mold you find on that leftover pizza you left on the counter for a week. The mold in cheese is a cultured bacteria and not the kind of mold that you get from dust and germs flying around the house. It's a very technical process.

Cheese is not mold - it is pressed curds, which is made from curdled milk. HUGE difference. Once the cheese is made and cured, it is usually covered in wax to prevent air getting at it, and to prevent it from growing mold. Except for a few specific types of cheese (such as blue cheese, which has a specific kind of (benign) mold growing in it) most cheese that grows mold is not good. If a slab of cheese does have mold on it, you should cut away at least an inch below the surface where the mold is, as it is apt to have penetrated almost that far into the cheese.

Cheese is NOT mold. It can acquire a mold over time but the cheese itself is not a mold initially.
