This is how I learned to make omelette's in school. Beaten eggs with a touch of water added (to create steam and make the eggs fluffy). Oil a pan lightly and heat to medium (NOT MEDUIM HIGH). Add you eggs and let them set up. Then, believe it or not, stir the eggs like you with lightly scrambling them. Let the air get into the eggs. Let them set up again. Now, add your fillings. Chesse is the most common and what I like. Only add the filling to the half of the omelette on the far side on the handle. Then take the handle of your pan and tip it away from you. Take a spatula and start to roll the omelette toward the mixture. Just push it lightly on top of itself until the mixture is covered. Put it back down and let it cook for about a mintue. Flip it over in your saute pan, without using your spatula if you can (JUST FLIP IT). cook for another minute. Done.
If your going to add any other fillings, make sure they are already cooked.

I think I've enjoyed simple cheese omelets the most. It is important to use good cheese that you like. I prefer to combine a few cheeses. I use some Havarti, because it is creamy and melts beautifully, and I use some sort of stronger flavored Swiss-type of cheese, like Gruyere.
How did I make it precisely? I put three eggs into a bowl and mix them up a bit with a fork. I add some water (about 1/4 cup) and salt and black pepper. I heat up my pan (I use a 10" omelette pan with a non-stick surface) I put a couple tablespoons of butter in the pan and let it melt. For an omelet, you don't want your pan too hot. Pour the eggs into the pan. As the egg begins to set, lift up the edges and let the runny part of the egg on the top run under the egg. When it is pretty much set, but not dry yet, put the cheese you chose on the egg. You can fold it in half, or, if you're feeling fancy, roll the egg up Put it on a plate and enjoy it. It is pretty with something like a piece of parsley on it.

Spanish Omelette with green peppers, onions and garlic
Serves 2
INGREDIENTS:
4-5 eggs, beaten
1 Tablespoons butter
2 Tablespoons oil
salt and pepper to taste
1 onion, thinly sliced
1 red pepper, thinly sliced
1 green pepper, thinly sliced
1 garlic clove, crushed
PREPARATION:
Sauté the onion in the oil until soft.
Add the peppers and garlic and continue cooking until the peppers are soft. Remove from heat and allow to cool slightly before adding to eggs.
Add the peppers and onions to the eggs, just before you're ready to make the omelet.
Melt the butter in a 9-inch skillet and add the eggs. Stir with the back of a fork and cook until the eggs are well browned on the bottom and almost firm on top.
Put a heatproof plate on top of the skillet and turn omelet onto plate. Slide omelet back into skillet to brown the other side of the omelet.
To Serve:
Serve hot or cold, cut in half or into wedges. Serve it with a salad for a light lunch or supper.

Taco Omlet - Makes 4 Servings
Brown one pound of ground beef with a small white onion, coursley chopped. Add one packet of taco seasoning mix with 1/4 cup water. Let simmer. Meanwhile, whip 12 large eggs together in a glass bowl. Heat large skillet and spray with non-stick cooking spray. Poor in 1/4 egg mixture. As soon as it sets slightly, add 1/4 of the beef mixture, and 1/4 cup shredded cheddar cheese. As cheese starts to melt, flip the omlet in half, until egg is fully cooked. Serve with more shredded cheese on the top, fresh salsa and sour cream. DELISH!!

4 eggs scramble with 2 tablespoons of milk and a pinch of salt and pepper keep in a bowl set to side you want at room temp
1/2 bell pepper green diced
1/2 bell pepper red diced
1/3 red onion diced
3 green onions diced
10 bacon strips cooked and diced
1 tomato diced
1/3 cup cilantro cut small
Cook the diced stuff with apx 2 tablespoons oil for about 3 min set aside.
Now place 1/2 you egg mix in pan cook on med/low heat apx. 90 sec. and flip now add cheese to 1/2 the omelet I use pre-grated Kraft Cheddar I like sharp. Use about 1/2 cup. and half you diced cooked mixture and let cover omelet let cook about 2-3 more min. just before the omelet get dark brown.
Now top with 1/4 cup cheese and sliced avocados this makes 2 you would repeat for the second. I made this one day after making salsa and it is great.
Diced is about the size of 1/2 a dime in my opinion.

I can't ever make a good omelette, it either falls apart or burns. But I can make some tasty scrambled eggs. I just add some Mrs. Dash original and some onion powder, and put cheese on it when its done. But whatever works for you.

10 cups eggs, beaten
1/2 cup fresh herbs, chopped
Salt and pepper to taste
5 cups tomatoes, chopped and seeded
40 slices turkey bacon, cooked
20 ounces mozzarella cheese, shredded
Instructions
Blend eggs with herbs and salt and pepper. Cover and hold for service in the refrigerator.
For each omelette, pour 4 ounces of egg mix into a 6-inch nonstick pan. Cook over medium heat until bottom of omelette is set and lightly browned.
Place 1/4 cup of chopped tomatoes on one half of omelette. Top with 2 slices of turkey bacon (folded to fit) and one ounce of cheese.
Broil to melt cheese. Fold omelette over to enclose filling. Serve immediately.

This Morning!!! im not a big fan of eggs so i tried to spice it up. i used cheese and peppers and tons of herbs. i mixed it together ( most people dont but i do to get the flavor) and than i put it on the omlet after i fryed it. so i had crushed herbs and peppers and cheese grinded in. ( onions are ok too but i dont like them) i sprinkled cheese and salt of the top when it was done cooking and ate it. it takes about 15 minutes to cook and grind it all up but it was worth it.

I start by sauteing some mushrooms and green peppers in a little bit of butter, when they are brown and soft, add 2 beatten eggs and cook until done. you can add as much mushrooms and green peppers as you like. you can even add some cheese on top if you like cheese. I don't like cheese on my omelette's.
