Take as many Yukon gold potatoes as you want to eat cut them in half and boil them with the skin ON. Once fork tender, take them off the heat and drain. Then hard boil your eggs. By now your potatoes should be cool enough to handle, peal them by hand. Be careful not to break them up too much. Place them in a mixing bowl and add a few tablespoons of white vinegar. While that is resting for a minute, peal and chop your hard boiled egg. First add your mayo to the mixing bowl. A little and a time and gently stir trying to to break up the potato too much. Now add your egg and mix. Finally, add in the mustard you prefer a little at a time and taste often to make sure your getting the taste you like. Salt and pepper to taste. I like to serve the first batch warm, but cold is just as good. Make extra for the week.

INGREDIENTS:
4 to 5 cups cubed potatoes, cooked, drained
1/2 cup chopped celery
1/2 cup chopped red onion
3 hard-cooked eggs, chopped
2 tablespoons chopped sweet pickle
2 teaspoons sweet pickle juice
1/2 to 2/3 cup mayonnaise or Miracle Whip
1/2 to 1 teaspoon prepared mustard
1/4 to 1/2 teaspoon salt
1/8 teaspoon ground black pepper
PREPARATION:
Combine all ingredients in a bowl and stir gently to combine. Refrigerate until serving time.
Serves 4 to 6.

This makes a nice salad. I use Miracle Whip instead of mayo.

Hi, Bring an egg to the boil and put a lid on the pot and let set for twenty minutes. Cool and peel.
Take about 4 medium potatoes and boil them in their skins about twenty minutes. Test to make sure they're done with a fork. Don't over cook them or they fall apart. Use eastern potatoes, i.,e., red potatoes or Maine potatoes. (they're waxy potatoes and not too dry)
Remove potatoes from hot water and let cool enough to handle and remove the skins. Cut into bite size pieces, I like mine about 3/4 of an inch.
Use about two table spoons of mayo to one teaspoon of mustard and mix. I add about half a tablespoon of chopped sweet pickle or sweet relish and add about a 1/2 teaspoon of celery seeds at this point)
Gently stir the mayo/mustard mix, pickle or relish and celery seeds into the potato. Chop the cooled egg and add to the potato salad.

DELI STYLE POTATO SALAD
8-10 large potatoes
half of a medium onion, diced
2 tbsp. sweet pickle relish (or dill relish)
1/4 cup celery, sliced thin
1 1/2 cups miracle whip
2 tbsp. prepared mustard
1/2 tsp. celery seed
sugar, salt and pepper to taste

Peel potatoes and place in a large pot of boiling water. Cook until tender, drain and refrigerate until chilled. Chop coarsely. In large bowl combine miracle whip, mustard, celery seed, sugar, salt and pepper. Reserve 1/4 cup of dressing. Add onion and potatoes to dressing. Mix well and refrigerate overnight. If salad is too dry, add 2 tbsp. of water to reserved dressing and mix into salad to loosen. Add salt and pepper to taste.

potato salad!!!

6 white potatoes or red potatoes
1 red pepper
1 green pepper
1 Spanish onion (red onion)
4 eggs, boiled
2 cucumbers, remove the seeds (use the meat only)
2 1/2 cups Hellmanns Mayonnaise
1/3 cup Dijonnaise mustard or yellow mustard (mom always used plain yellow ( i modified the recipe with the Dijonnaise)
1 tablespoon horseradish
salt and pepper

Boil potatoes and cut into cubes, cool.
Cut the vegetables and eggs up to whatever size you prefer.
Combine veggies with potatoes and toss.
Add mayo, mustard, horseradish, salt and pepper to taste. Stir.
Better after it has time to "sit".

I used to boil 2 to 3 big potatos (peeled). Once cooked, dry them up, cut them into small pieces. Fried the bacons, once done, cut into small pieces as well. Put few spoons of the mayo, bacon & "chong" (in chinese). Mixed well, leave it in the fridge for a cold potato salad to be served. Hope this will help you.
