I found this brand of potatoes and use them all the time now.

1 package Simply Potatoes® Shredded Hash Browns (or prepared potatoes of your choice)
1 can (10 3/4 ounces) cream of chicken soup
2 cups (8 ounces) Sharp Shredded Cheddar Cheese
3/4 cup sour cream
1/4 cup Butter, melted
2 tablespoons onion, chopped

Preheat oven to 350°F. Thoroughly combine all ingredients except the hash browns. Place Simply Potatoes® in a greased 2-quart baking dish. Add mixture to baking dish and stir until well mixed. Bake for 45 minutes.

Variations:
Use any variety of Cream Soup
Add 1 Clove of Garlic, minced
Add a Topping:
2 cups Cornflakes
1/2 cup Margarine, melted
Mix together and sprinkle over casserole, bake according to directions.

+ you will need to melt butter and mix it with sour cream then add you potatoes then put in the oven like a regular casserole. Think of a nice colorful topping like green pepper rings to make it look so fine when it is cooked.
