Your NCB should be the least of your worries. By not declaring everything, your whole insurance cover is invalid. You are best to call them up and clarify or start again with a different insurance company and this time, tell them you have a conviction. If you ever have an accident, you could be prosecuted for not havng valid insurance.

It's up to you to make sure your details are 100% correct before you sign. If your conviction was on your signed application and they forgot it you're probably insured. If you conveniently forgot it you're not. Company may pay out 3rd party, but will chase you for the money, and put you on an insurers black list

You need to tell your insurance company every thing or they won't pay out if you have an accident.
At the end of the year they will check your details again to renew your policy and find out from the DVLA.

Tell the whole truth. If they find out (and they will if you claim), you're on your own buddy!
Making a false statement invalidates your cover. You could be prosecuted for having no insurance

you are on dodgey ground here youhave to be totally open re convictions, did you orginally declare it on your application ,if you did then they may be ok but if not then you could have a problem,
Which will be worse if you do not speak to them and get it sorted
