I have been thinking of buying tuna, etc from the store and marinating it in lime juice, that would kill any parasite eggs etc if they were in there yes?

As some of the other people mentioned, you can use almost any kind of seafood in ceviche. I find that I usually buy frozen fish. They fast-freeze it out on the boats when they catch it, so it is often "fresher" than what you can buy fresh. It's probably a better choice if you don't have a good, reliable fish market available.

The only fish that I've ever encountered parasites in was fresh Dover sole.

My wife is a Peruvian and we eat ceviche 2-3 times a month and never get sick from it (and never get sick OF it, either)

There are a few factors that could deem homemade ceviche 'unsafe'.
Always ensure the fish is really fresh, from the fishmongers and tell the fishmonger you intend to eat it raw/cured.
Maintain at a safe temperature, refrigerate as soon as possible after purchase.
Marinating in lime juice does essentially 'cook' the fish, but not right to the centre, but as long as you're fairly careful, it's fine, and delicious! After all curing in citrus came about as a method of preservation!

I make it alot and I'm still alive. I don't use tuna, though. Pacific Red Snapper, shrimp or any other tasty white fish I can find out here in the midwest. I also make seafoood cocktails with calamari, shrimp, prawns, scallops, abalone, clams. Mmmmm. Now I have a craving! If you have a good recipe to share, mind emailing it to me?

I love ceviche!

High quality wild-caught tuna doesn't usually have many parasites, and human gastric juices kill the rest. Get very good (sushi-grade) tuna and you should be safe.

lime juice will not kill parasites, however if you make sure your tuna is really really fresh you should be o.k. Only buy from a reputable fish monger, I wouldn't suggest the grocery store.

I make and eat it all the time. Between the lime juice and salt it kills anything harmful. You allso have to make sure everythimg is really fresh. If it smell fishy pass it by.

|If you have fresh seafood you should not have aproblem, but I agree , now I have to go and get some cod and make me some too!!! I| like it w/ cactus tomatos, green olives,red peppers,jalapeno,and red onion the juice,of 10 FRESH limes salt pepper and oregano,
