I like the course, but its getting annoying...not a good balance between Christianity and other beliefs...maybe I'm just pissed at that. The book report can be on any number of books. I've read 2 of the ones from the list in hopes that I would get inspired...now I'm just unmotivated...arghhh

It's just a book report, not a life's calling. Start by writing a summary paragraph, then react to your summary. It's OK to say that you found the whole matter uninspiring. That may be the message you receive from this Religions class.

Maybe this is your subconscious saying you haven't worked out the paper in your head yet. Maybe you need more materials, or a better plan, or maybe you want to add a slant like you said. When I wrote a story for a contest, I couldn't type it up, since the story didn't represent my true beliefs and underminded my personal skills. Find a topic that you really believe in, plan what you want to say, and you'll do just fine!

Maybe you should write the report just on that frustration itself that you are experiencing. That could truly be the driving force behind all of today's people's choices for Religion or choice to avoid or ignore religion.
