Banana Bread

3 ripe bananas, mashed
2 eggs, well beaten
2 cups all-purpose flour
3/4 cup granulated sugar
1 teaspoon salt
1 teaspoon baking soda
1/2 cup chopped pecans

In a large mixing bowl, mix together the mashed bananas and beaten eggs. Sift together the flour, sugar, salt, and soda and stir into banana mixture until well blended. Stir in pecans.
Pour banana nut bread batter into a 9x5-inch loaf pan and bake at 350° for 55 to 60 minutes, until a wooden pick inserted in center comes out clean.



Banana Cream Pie

1 ea. graham cracker pie shell
1 pack vanilla pudding mix (5 oz.)
3 ea. bananas
1/2 qt. cold milk
whipped topping as needed
Pecan

Mix milk with pudding mix (follow directions on pudding package). Peel and slice bananas (3 bananas per pie). In shell, lay 1 layer of bananas, top with half of the pudding, another layer of bananas then top with the remaining pudding. Cover and place in refrigerator. Remove and top with whipped topping. Top with Pecans.


Yield = 6 servings

Banana Pecan Cream Pie

Pie Crust
1 cup sugar free cookie crumbs
1/4 cup finely chopped pecans
2 tbsp. margarine

Filling

2 med. bananas
1 3/4 cup skim milk
1/4 cup unsweetened apple juice concentrate
1/4 cup cornstarch
2 tbsp. margarine
4 tsp. Sugar
1 tsp. vanilla extract
Pinch of salt

Topping

1/4 c. chopped pecans
Cookie Crumbs(optional)

Crust

Soften the margarine
Blend cookie crumbs, pecans, and margarine in a bowl to make the crust.
Press the pie crust into a 9 inch pie plate.
Chill for 30 minutes.

Filling

In a saucepan, heat all filling ingredients, except margarine, to a boil over medium heat, whisking until smooth (about 10 minutes).
Reduce heat and simmer for 1 minute.
Scrape into a bowl.

Whisk in remaining 2 tablespoons of margarine until smooth.
Cover with plastic wrap and cool to room temperature.
Slice the bananas
In prepared pie plate, arrange sliced bananas in 1 layer.
Whisk cooled filling and pour evenly over bananas

Topping

Mix remaining cookie crumbs and pecans together and sprinkle over the filling. Chill the Banana Pecan Cream Pie for 1 hour before serving.

4 cups flour
6 large bananas, very ripe, mashed
1 cup finely chopped pecans
PREPARATION:
Cream together butter and sugar. Add eggs, one at a time, beating after each addition. Sift dry ingredients together; add to creamed mixture. Stir in bananas and chopped pecans.
Pour banana nut bread batter into 2 well-greased loaf pans; bake at 325° for about 1 hour and 15 minutes, or until a toothpick inserted in center comes out clean.


OR....


Warm Banana Splits

Slice the banana down the center with the skin still on. Stuff sliced banana with choclate chips, nuts, marshmallows, or anything you want! Wrap in aluminum foil and place in 350 degree oven for 10-15 minutes. Remove peel and top with vanilla ice cream.

Also a great idea for camping.

If you have butter and brown sugar, you could make bananas foster. Melt the butter on the stove then stir in the brown sugar until it is a runny carmel consistency. Then add sliced bananas until well coated. Top with the chopped pecans. It's tasty! If you have it, serve it over vanilla ice cream. YUM!

how about banana pudding with pecans!! get instant pudding and make it as the box says. In a dish put a layer of vanilla wafers and then a layer of pudding, next put slices of banana and pecans repeat until all the pudding bananas and pecans are gone! yum yum

you can make banana cake....

2 cups flour
1/2 cup sugar
1 cup mashed banans
1/2 cup milk
1 tsp baking soda
1 tsp baking powder
1/4 cup pecans
2 eggs
1/4 cup rolled oats
* order doesnt matter
* bake at 350 for 20-30 min

Or

you can make a banana pecan milkshake

Here's 2 good ones.

Now the first one is banana nut muffins. If you don't have a muffin pan, you can cook it in a cake pan -- it takes a little bit longer to cook though when it's in a cake pan.
