One theory from the web research
i've done is that it started during
Big Ron's administration when
"ketchup" was declared a vegetable
for school lunches. So, Del Monte finally
caved and quit spelling it "Catsup".
Hunts had apparently spelled it variously
and had a special name for it in Iowa.
any more info?

BlueSea is wrong about "ketchup" being a Heinz trademark, but no matter. Yes, indeed, over the past few decades "ketchup" became the dominant word in the USA except for parts of the south. Also in Canadian English.

Ketchup is not a trademark of only heinz, I buy generic ketchup all the time and that's what the label says"ketchup" and it's not made by heinz. Thank goodness or I would have to quit buying it!
Anyway, not sure why it's not called Catsup anymore, I always kinda liked spelling that.
