I am making dinner for my husband and I don't know what to do with it

6 BONELESS BREAST HALVES, UNCOOKED, WITHOUT SKIN, CUT INTO 1 INCH CUBES
1 CAN cREAM OF cHICKEN SOUP
1 PKG. FROZEN BROCCOLI
1/4 CUP LEMON JUICE (I USE MORE THAN THIS)
1 TBSP CURRY POWDER (I USE ALOT MORE THAN THIS)
1 CUP SHREDDED CHEDDAR CHEESE
1 SLEEVE RITZ CRACKERS
ENOUGH COOKED RICE TO FEED THE BOTH OF YOU

cook in oven. put chicken in a 9"x13" pan. in another bowl, mix broccoli, soup, lemon juice, and curry powder. pour over chicken. cover and bake for one hour at 375 degrees. take out and cover with shredded cheddar cheese and crumbled ritz crackers. then cook in oven for about 15 minutes or until cheese is melted. serve over rice.

Ingredients:
4 boneless chicken breast halves
1/3 cup pesto sauce
4 ounces mozzarella cheese - sliced thin
1 teaspoon olive oil


Directions:

Pound chicken breasts to flatten slightly. Heat oil in skillet, add chicken and saute over medium-high heat until browned on both sides, about 15-20 minutes total.

Divide pesto between chicken breasts, spreading almost to the edge.

Top with cheese slices, cover pan and heat just until the cheese is melted.

My absolute favorite recipe is called "Super-Crunch Chicken".

Rinse the chicken strips with water.
Put them in a gallon-sized Ziploc bag.
Add 1/4 cup of Mayonnaise or Miracle Whip.
Add 1/4 cup of grated parmesan cheese.
Add 1/2 of a bag of Pepperidge Farm stuffing (dry - I like the blue bag because the pieces are smaller.)
Shake or squeeze the bag until the pieces are coated.
Put the pieces on a cookie sheet and bake at 375 for 20 - 25 minutes.

It is super easy and fast - and delish!

I'm not sure I understand what you mean by thin breast strips. If you mean breast that was sliced into thin strips, try making Philly cheesesteaks. I've had some very good ones using chicken breast. If you mean something else, I can't help you.

MARINATED CHICKEN STRIPS

1 lb. boneless breast of chicken
3 tbsp. cornstarch
3 tbsp. oil
1 egg white
Chives
Parsley
Salt and pepper
1/4 c. butter

Remove skin from chicken. Cut chicken into small chunks or strips. Salt and pepper them and mix with fork. Let sit for 20 minutes. Next, add cornstarch and oil, mix and let sit for 20 minutes. Step 3, add egg white, mix well and let sit for 30 minutes.

To cook, melt butter in heavy skillet until it just starts to brown. Add chicken and saute until they start to brown. Add chives and parsley to suit your taste and saute for another minute. Good to serve with rice and fresh vegetables.

"Chicken Pepper Stir-Fry" - 3 to 4 servings

1 EACH small green, sweet red and yellow pepper; julienned (thin strips)
1 medium onion; quartered
2 garlic cloves; minced
4 tbsp. olive oil; divided
3/4 lb. boneless, skinless chicken breasts; cubed
3/4 tsp. Cajun seasoning
1/3 cup packed brown sugar
2 tsp. cornstarch
1 tbsp. water
1 tbsp. lemon juice
1 tbsp. honey mustard
1 tsp. soy sauce
1 tsp. Worcestershire sauce
Hot cooked rice (optional)

In large skillet, stir-fry peppers, onion and garlic in 2 tbsp. oil until crisp-tender. Remove and keep warm. In same skillet, stir-fry the chicken and Cajun seasoning in remaining oil until juices run clear.
In small bowl, combine brown sugar, cornstarch, water, lemon juice, mustard, soy sauce and Worcestershire sauce; pour over chicken. Return pepper mixture to skillet; cook and stir 1 minute. Serve with rice, if desired.


"All That Jazz Seasoning" (Cajun flavor) - 1 cup

1/4 cup garlic powder
1/4 cup onion powder
2 tbsp. paprika
1 tbsp. ground red pepper
1 tbsp. black pepper
1 1/2 tsp. celery seeds
1 1/2 tsp. chili powder
1 tsp. salt
1 tsp. lemon pepper
1/2 tsp. ground nutmeg

Combine all ingredients in an airtight container.

White rice

Stir fry the chicken in a little olive oil after dredging in
flour, salt, pepper. Also add onion, or green pepper, or garlic.
or mushrooms.

Make gravy in the drippings with wine, or a little milk or cream.

Steam veggies on the side.

There are several things you can do with chicken strips. You can throw them in with some pasta, perhaps some sun dried tomatoes, and cheeses. Quesadillas are great if you have tortillas and onions. Or try a simple salad with them in it.

Cut breast into strips. Sock in buttermilk. roll in flour that you have mixed in salt. pepper, garlic, and dry ranch dressing mix. Deep fry.
