I have some stuff like Emeril's seasoning, paprika, and garlic power. How long will the flavor keep or how often should they be replaced?

Some are "spent" before you get them home. Try buying fresh bulk spices to order. On Emeril's seasoning. Why would you want to cook with garlic powder for anything. Fresh garlic can not be beat. Garilc, both fresh and powdered or with salt, has a very low flash point. A little too much heat and it becomes very bitter. I know from my own experience as both a home cook and a restaurant chef that garlic powder is the worst. Once I just slightly overheated it and the whole dish tasted like the smell of a house fire and its aftermath.

are you kidding those damn things would survive a nuke disaster--i've had some in my spice cabinet for 5or7 years-you may need to 'rehydrate 'them or add them to whatever you are cooking at the start-so the flavour ' develops-good luck
