Chicken Ritz Casserole
Ingredients:
5-6 chicken breasts, cooked
1 can cream of chicken soup
1 can cheddar broccoli soup
about 1/4 soup can of milk
1-1/2 c. sour cream
2 c. cooked minute rice (1 c. prior to cooking)
dash salt and pepper
30 to 40 Ritz crackers, crumbled
Butter
Cooking Instructions:
Cook chicken and remove chicken from bone and cut up. Place chicken in casserole dish. Mix together remaining ingredients. Pour mixed ingredients over chicken. Top with crushed Ritz crackers; dot with butter. Bake at 350F. for 45 mins.

Since you mentioned they are Indian there is a good chance that they are completely vegan - meaning they don't eat cheese or dairy or eggs as well as meat. A pasta dish is a good idea, but make it without cheese (you can always put cheese on the side, just in case.) A rice pilaf would also be good, with either stir-fried or stewed veggies to add to it. In fact, a veggie stir-fry is so fast and easy, that would be my top choice.

For a vegetable side dish how about green Beans with Tomatoes. Its healthy and even shows off the Christmas spirit in its colors.
Steam frozen or fresh Green beans. Saute them in garlic and olive oil. Add stewed diced tomatoes. Add seasoning of your choice (basil, oregano are some examples) and let flavors stew for 5 minutes. Your done!

Put some time and some thought into the food you prepare and present to your friends. That is the point you know. Quick and easy is ok for a Tuesday night after work. This is a special time of the year, don't turn it into just another thing you have to do.

depending upon the main dish, roasted root veggies are surprisingly tasty and popular (even to folks who say they don't like veggies).
I use one potato, one sweet potato, one yam, one or two turnips, one parsnip, one carrot, one onion and one red or green bell pepper ( I know it's not a root...). Peel the root veggies and onion, cut in chunks, drizzle with olive oil and some balsalmic vinegar and a little salt and pepper and gently toss. Lay two stems of rosemary (whole) on either side of 9x13 pan and cover. Roast at 375 for an hour; check the tenderness (you don't want mush but not hard either). Uncover when fork tender, and bake uncovered for 5-10 minutes longer to brown them up. Remove the rosemary sprigs and place in a service bowl or platter.

Cheese ball and crackers.
1 8 oz cream cheese
1 1/2 tsp dry Ranch dressing
1 cup grated sharp cheddar cheese
Cream all together, serve with nice crackers. You can roll the cheese ball in chopped walnuts if you want, also.

I love to bring colorful pasta salads! Cook some tri-colored pasta according to package direction, drain, put in bowl & toss in some Italian dressing, olives and your favorite cheese. Keep in the fridge til your ready to go and maybe bring a little extra dressing on the side for anyone who wants it.

Jell-O waldorf salad
1 4 serving pkg orange jell-o
1/2 cup chopped walnuts
1/2 cup chopped apple
1/2 cup chopped celery
2 Tbsp lemon juice
1 cup boiling water
3/4 cup cold water
dissolve jell-o in boiling water. add cold water and lemon juice chill about 20-30 minutes and stir in celery, apple and walnuts. Don't forget to cover with plastic to prevent a skin from forming. chill completely until serving
