Celebration and rejoicing in that God so loved the world that he took the form of man to save us from ourselves. To give us hope. And to be thankful for all our blessing and share these blessings with those that have little or nothing.

Depends on whose truth you want to select as a best answer....
the true meaning was to celebrate the return of life after the long cold winter...longer days, sun shining brightly in the sky, etc. It was a pagan tradition....
Christians later came along and made the holiday their own, stealing symbols such as the Sun and making it the halo's of angels, and making the winter solstice the day that Jesus was born. Naturally, they screwed that up too, as the solstice is on December 21, not the 25th....

To remember Christ, His birth, His life, what He did for us. It sort of gives us a good time to take stock and reevaluate. It CAN be a very spiritual, sacred time of year, but unfortunatly, for most it's not. Commercialism runs rampent all season.
