You could put a small, VERY small blob of icing (the writing kind) on the cookie, then place the little balls you can find in shops, usually silvery, but I'm sure they have multicoloured ones. OR, you could put smarties on them - red and green ones.
That'd make them look like baubles :D

Try using M&Ms in place of the chocolate chips (the mini ones should work fine). The candy will be crunchier than chocolate chips but you'd have different colours in the cookies. You could try putting sprinkles on regular chocolate chip cookies prior to baking but the colors might run. I had this happen with sugar cookies. You could try putting the sprinkles on while the cookies are still hot from the oven. I realize you said you don't want to make them any sweeter, but if you change your mind, try making chocolate chip ice cream sandwiches.

Get a package of white chocolate candy mix, (in Walmart cake decorating dept). Melt and drizzle in patterns on cookies. You can make stars, ornaments, and any Christmas pattern you can think of. Let dry on cookies until firm before you package to transport to work. You can add food coloring to seperate batches of candy mix if you wish.

I like the idea about dipping them in chocolate. You could even just dip them halfway, that way people could still see they were chocolate chip underneath. You could also alternate white chocolate, milk chocolate and dark chocolate to dip them in.
