I want one for Christmas dinner

Well, granny get out your grinder!
Skin the darn thing....make sure it's dead, we don't want to tick off the veg heads around here.
Put the meat into the grinder with some seasoning and grind away ( no pun intended)
Take the ground meat and add some rice and tomato sauce and put it in a casserole dish. Add some breadcrumbs for topping and for decoration put one of the claws in the middle (the kiddies love this)
Bake at 350 for 45 minutes, let rest for 15 and enjoy.
Some nice moonshine and hey, you have the 2 food groups!

this is the best recipe ever!!!!!!!!!

1 possum
1 onion
1 clove garlic
clarified butter
olive oil (enough to brown meat without becoming dry)
1 cup dry red wine
flat or field mushrooms, sliced (big meaty ones)
2 tablespoons fresh herbs (a mix of rosemary, thyme, marjoram, dill and parsley)
1 tablespoon tomato puree
1 cup dark beer, eg black mac,monteiths
1 cup brown possum stock
1 tablespoon marsala


1. Skin and bone the possum (use only the best meat for the casserole, ie: the strip loins and hind quarters, cubed).
2. Reserve the carcass and trimmings for stock.
3. In a heavy pan, heat the clarified butter and oil.
4. Sauté onion and garlic.
5. When onion is clear, remove to casserole.
6. Dust the cubed possum with flour and brown in batches.
7. Add to casserole.
8. Melt a little more clarified butter and sauté bacon and mushrooms.
9. Remove to casserole De-glaze pan as necessary with red wine- add this to casserole together with herbs, ground pepper, tomato purée, beer and marsala.
10. Stir, cover and cook in slow oven for 2-3 hours, adding more possum stock if necessary.

I prefer just making a 'possum pot-pie

1 # boneless, skinnless 'possum meat, cubed
6 carrots, skinned and cut up small
1 small onion, diced
2 celery stalks, cut small
1 cup corn
1 cup peas
1 premade pie crust
water
vegetable oil
flour
salt
pepper
Tabasco

Preheat oven to 325

Heat oil in pan on med-high heat. Coat meat with flour. Cook meat in pan until firm, set aside. In the same pan with the meat drippings, add the carrot, onion and celery. Cook until tender. Add meat back in, and add the corn and peas. Add water, 1/4 cup at a time and heat ingredients to create a gravy, don't add too much water. Add salt, pepper and Tabasco to taste.

Put the mix into a 9" deep dish pie pan, cover with pie crust. Bake until crust is golden brown, 30-45 minutes.

Honey! You don't want jes' any ol' possum. Git yousef one o' them armydillas and have yo' sef a possum on th half shell.
